Description
This creamy and refreshing frozen yogurt recipe blends whole milk Greek yogurt with rich coconut milk and natural sweeteners for a delightful treat. Featuring tart cherries or raspberries swirled in, it offers a perfect balance of sweetness and tanginess, complemented by optional toasted almonds for added crunch. Easy to make with an ice cream maker, it’s a healthier alternative to traditional ice cream that's ideal for warm days or as a guilt-free dessert.
Ingredients
Main Ingredients
- 2 cups whole milk Greek yogurt
- 1 can full fat coconut milk (refrigerated, scoop only the solid part)
- ⅔ cups cane sugar
- ¼ cup maple syrup
- 1 teaspoon vanilla extract
- 1 teaspoon sea salt
- ¾ cup tart cherries or raspberries, thawed if frozen
Toppings
- Extra tart cherries
- Toasted sliced almonds
Instructions
- Prepare the base mixture: In a large bowl, whisk together the whole milk Greek yogurt, solid part of the refrigerated full fat coconut milk, cane sugar, maple syrup, vanilla extract, and sea salt until the mixture is smooth and well combined.
- Churn the frozen yogurt: Pour the mixture into your ice cream maker and start the churning process according to the manufacturer’s instructions, ensuring it begins to thicken properly.
- Add the fruit swirl: Using a fork or potato masher, gently break up the thawed tart cherries or raspberries. Add them into the ice cream maker towards the end of the churning process so they are evenly distributed and swirled throughout the frozen yogurt.
- Finish and serve: Once the churning is complete, scoop the frozen yogurt into bowls or cones to enjoy immediately. Alternatively, you can transfer it into a container and freeze for an additional 30 minutes to firm up for a more solid texture.
- Optional toppings: Garnish with extra tart cherries and toasted sliced almonds for added flavor and texture before serving.
Notes
- Refrigerate the coconut milk can overnight and scoop out only the solid cream part for the best creamy texture.
- If you don’t have an ice cream maker, you can freeze the mixture in a shallow container and stir every 30 minutes until firm for a no-churn alternative.
- Adjust sweetness by varying the amount of cane sugar and maple syrup to taste.
- Use tart cherries or raspberries fresh or thawed if using frozen for a vibrant fruit flavor.
- Toasted sliced almonds add a crunchy contrast to the creamy frozen yogurt, but can be omitted for a nut-free version.
