Ingredients
Cake Batter
- 210 grams (1 and 1/2 cups) plain flour or all purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 150 grams (3/4 cup) caster sugar or granulated sugar
- 1 cup (approximately 1 large) red apple, peeled and roughly chopped
- 2 large eggs
- 1 teaspoon vanilla extract
- 120 ml (1/2 cup) vegetable oil or flavourless oil
- 120 ml (1/2 cup) Greek yogurt
Cinnamon Topping
- 50 grams (1/4 cup) caster sugar or granulated sugar
- 1 teaspoon ground cinnamon
- 1 tablespoon butter, melted
Glaze
- 30 grams (1/4 cup) icing sugar or powdered sugar, sifted
- 1-2 tablespoons milk
Instructions
- Preheat and Prepare Pan: Preheat your oven to 180°C (350°F) standard or 160°C (320°F) fan-forced. Grease and line an 8-inch round cake pan with baking or parchment paper to ensure easy removal after baking.
- Mix Dry Ingredients: In a large mixing bowl, combine the flour, baking powder, baking soda, salt, and sugar. Add the roughly chopped peeled apple and stir briefly to distribute the apple pieces evenly throughout the dry mix.
- Mix Wet Ingredients: In a separate bowl, whisk together the eggs, vanilla extract, vegetable oil, and Greek yogurt. Whisk just enough to break the egg yolks and incorporate the ingredients evenly.
- Combine Batter: Pour the wet ingredients into the dry ingredients. Gently mix with a wooden spoon until combined, taking care not to overmix which can lead to a dense cake. Once combined, spoon the batter evenly into the prepared cake pan.
- Make Cinnamon Topping: In a small bowl, mix together the sugar, ground cinnamon, and melted butter until you have a lumpy but moist topping. Sprinkle this cinnamon topping evenly over the surface of the batter in the pan.
- Bake the Cake: Bake the cake in the preheated oven for 30 to 35 minutes. Test doneness by inserting a skewer into the center; if it comes out clean, the cake is ready. Remove from oven and transfer to a wire rack to cool completely inside the pan.
- Prepare and Apply Glaze: In a small bowl, mix the sifted icing sugar with 1 tablespoon of milk, stirring until smooth. If the glaze is too thick, add an additional tablespoon of milk to reach desired consistency. Drizzle this glaze evenly over the cooled cake to finish.
Notes
- Use a red apple like Fuji or Gala for a balanced sweetness and good texture.
- Do not overmix the batter to keep the cake light and tender.
- Allow the cake to cool completely before glazing to prevent the glaze from melting and running off.
- Store the cake in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.
- You can substitute Greek yogurt with sour cream for a slight variation in flavor and texture.
