Ingredients
Shrimp Preparation
- 1 lb. shrimp (peeled, deveined, and tails removed)
- ½ tsp salt
- ½ tsp black pepper powder
Breading
- 1 cup all-purpose flour
- 1 cup panko bread crumbs
- 1 Tbsp Old Bay seasoning
- 1 large egg (beaten)
- Oil (for frying, about 2 - 2½ inches deep)
Bang Bang Sauce
- ½ cup mayonnaise
- 1 Tbsp sriracha
- 2 Tbsp sweet chili sauce
Garnish
- Cilantro (chopped)
Instructions
- Season the shrimp: In a large bowl, season the peeled and deveined shrimp with salt and black pepper, ensuring even coating for balanced flavor.
- Prepare breading stations: Arrange the all-purpose flour, beaten egg, and Panko bread crumbs mixed with Old Bay seasoning each in separate shallow bowls.
- Double bread the shrimp: Working with one shrimp at a time, dredge it first in flour, shaking off excess, dip it into the egg, and then coat with the seasoned panko. Repeat this sequence a second time for an extra crunchy texture.
- Rest the breaded shrimp: Once all shrimp are coated, let them rest for about 5 minutes to help the breading set.
- Heat the oil: Fill a pan with about 2 to 2½ inches of oil and heat it to 375°F (190°C) for deep frying.
- Fry the shrimp: Fry 9-10 shrimp at a time over medium flame until crisp and golden brown—about 2 to 3 minutes. Avoid overcooking to keep shrimp tender and juicy.
- Drain excess oil: Remove fried shrimp from oil and place on paper towels to absorb remaining oil.
- Make the bang bang sauce: In a small bowl, mix mayonnaise, sriracha, and sweet chili sauce until smooth and combined.
- Serve: Garnish the hot, crispy shrimp with chopped cilantro and serve immediately with the bang bang sauce on the side, or toss the shrimp in the sauce to coat evenly.
Notes
- Ensure the oil temperature remains steady around 375°F for perfectly fried shrimp.
- Double breading creates an extra crunchy outer layer that holds up well with the sauce.
- Do not overcrowd the pan when frying, as this lowers the oil temperature and results in soggy shrimp.
- The bang bang sauce can be adjusted for spiciness by varying the amount of sriracha.
- Use fresh shrimp for best texture and flavor.
