Description

A delicious and refreshing frozen treat, Yogurt Bark combines creamy yogurt sweetened with agave and flavored with vanilla and lemon juice, topped with vibrant berries, nuts, and granola. Perfect for a healthy snack or dessert, this no-cook recipe requires just a few simple ingredients and a few hours in the freezer.

Ingredients

Yogurt Mixture

  • 2 cups nonfat plain yogurt (or flavored yogurt)
  • ¼ cup agave
  • ½ teaspoon pure vanilla extract
  • ¼ teaspoon fresh lemon juice
  • Pinch of salt

Toppings

  • Strawberries, sliced
  • Blueberries
  • Raspberries
  • Finely chopped pecans (optional)
  • Granola (optional)

Instructions

  1. Prep: Line a baking sheet with wax paper and set it aside to prepare for spreading the yogurt mixture.
  2. Combine the ingredients: In a large mixing bowl, whisk together the yogurt, agave, vanilla extract, fresh lemon juice, and a pinch of salt until the mixture is smooth and well combined.
  3. Pour the mixture onto a sheet pan: Transfer the yogurt mixture evenly onto the prepared wax paper-lined baking sheet, spreading it into an even layer. Scatter the sliced strawberries, blueberries, raspberries, and optionally, chopped pecans and granola over the top.
  4. Freeze it: Place the baking sheet in the freezer for 2 to 3 hours, or until the yogurt bark is completely firm and frozen.
  5. Serve: Remove the yogurt bark from the freezer and break it into pieces for serving. Enjoy immediately for a chilly, healthy treat.
  6. Store: Keep any leftovers stored in an airtight container in the freezer to maintain freshness.

Notes

  • You can use flavored yogurt instead of plain for added taste variations.
  • Feel free to use any kind of fresh berries or nuts you prefer.
  • For extra crunch, add granola just before serving to prevent it from becoming soggy.
  • Agave can be substituted with honey or maple syrup if desired.
  • Store the bark in airtight containers or plastic wrap to avoid freezer burn.
