Description

A refreshing and vibrant watermelon salad featuring juicy watermelon cubes, crisp cucumber, and aromatic fresh herbs, all tossed in a zesty honey-lime dressing and generously topped with creamy feta cheese. Perfect for hot summer days and easy to prepare in just 15 minutes.

Ingredients

Dressing

  • 2 tablespoons honey
  • 2 tablespoons lime juice
  • 1 to 2 tablespoons quality extra virgin olive oil
  • Pinch of salt

Salad

  • 1/2 watermelon, peeled and cut into cubes
  • 1 English or Hot House cucumber, cubed (about 2 cupfuls of cubed cucumbers)
  • 15 fresh mint leaves, chopped
  • 15 fresh basil leaves, chopped
  • 1/2 cup crumbled feta cheese (more to your liking)

Instructions

  1. Make the dressing: In a small bowl, whisk together the honey, lime juice, olive oil, and a pinch of salt until well combined. Set aside to let the flavors meld.
  2. Prepare the salad: In a large bowl or serving platter with sides, combine the cubed watermelon, cubed cucumbers, chopped fresh mint, and chopped fresh basil. Gently toss the ingredients to mix them evenly.
  3. Finish and serve: Drizzle the prepared dressing over the watermelon and cucumber mixture, and gently toss again to evenly coat the salad with the dressing. Finally, sprinkle the crumbled feta cheese over the top and serve immediately for a fresh and tasty salad experience.

Notes

  • Use ripe watermelon for the best sweetness and texture.
  • Adjust the amount of olive oil in the dressing to your taste; start with 1 tablespoon and add up to 2 if desired.
  • For added crunch, consider adding some toasted nuts like pistachios or walnuts.
  • This salad is best served fresh but can be refrigerated for up to 2 hours before serving.
  • Fresh herbs like mint and basil provide brightness; feel free to experiment with other herbs such as cilantro or parsley.
