The eggs are cooked to a perfect soft or slightly set yolk, then bathed in a rich, buttery, and slightly tangy broth reduction, making for an addictive appetizer or snack that's easy to prepare in under 30 minutes.
Ingredients
Eggs
- 4 eggs
Sauce
- 1 tablespoon unsalted butter
- 1 tbsp garlic, minced
- 1 ½ teaspoons Old Bay seasoning
- 1 teaspoon sugar
- ¼ heaping teaspoon onion powder
- 1 teaspoon lemon pepper seasoning
- ¾ teaspoon paprika
- ½ teaspoon red chili flakes, or to taste
- 2/3 cup low sodium chicken bone or vegetable broth
- 1 tbsp lemon juice
- Kosher salt, optional
Garnish
- Parsley, chopped
Instructions
- Prepare ice bath: Fill a bowl with cold water and ice to create an ice bath; set it aside to quickly cool the eggs after boiling.
- Boil eggs: In a medium saucepan, bring enough water to fully cover the eggs to a rolling boil. Gently lower the eggs into the water and cook for 7 minutes for runny yolks or 7½ minutes for slightly more set yolks.
- Cool and peel eggs: Transfer the eggs immediately to the ice bath and let them sit for about 2 minutes until cool enough to handle. Peel the eggs under slow running water and pat dry with paper towels. Set aside.
- Make the sauce base: In a large skillet over low heat, melt the unsalted butter carefully to avoid clarifying. Add the minced garlic and stir, cooking for 1 minute to release aromatic flavors.
- Add seasonings and broth: Stir in Old Bay seasoning, sugar, onion powder, lemon pepper seasoning, paprika, and red chili flakes; cook for another minute. Pour in the broth, raise heat to medium-high, and cook for about 6 minutes until the sauce reduces and slightly thickens.
- Finish the sauce: Add lemon juice and a splash of water, stirring to combine. Taste and add kosher salt only if necessary, since the seasonings already contain salt.
- Serve: Place peeled eggs in a serving bowl, pour the prepared sauce over them, and garnish with chopped parsley. Serve as is or with crusty ciabatta bread or jasmine rice for a complete meal.
Notes
- Adjust red chili flakes to your preferred spice level.
- Use low sodium broth to better control the saltiness of the sauce.
- For firmer yolks, increase boiling time slightly, keeping in mind that longer boiling leads to fully hard-boiled eggs.
- Peeling eggs under running water helps remove shells more easily.
- Store leftover eggs and sauce separately in the refrigerator for up to 3 days.
