Ingredients
Curry Broth
- 1 14-ounce can lite coconut milk
- 1 tablespoon Thai red curry paste
- 3 garlic cloves, minced
- 3 tablespoons soy sauce (reduce to 1 tablespoon if sensitive to salt)
- 2 teaspoons fish sauce or lime juice (optional)
- 2 teaspoons sesame oil
Vegetables and Dumplings
- 3 cups spinach
- 14-20 frozen dumplings (depending on your baking dish size)
Garnishes
- ¼ cup chopped cilantro
- ¼ cup sliced scallion greens
- 1 tablespoon sesame seeds
- 1-2 tablespoons chili crisp
Instructions
- Preheat the oven: Set your oven to 400°F (204°C) to prepare it while you assemble the ingredients.
- Make the curry broth: In a 9x9-inch baking dish or a 3.5-quart oven-safe braiser, combine the lite coconut milk, Thai red curry paste, minced garlic, soy sauce, fish sauce or lime juice (if using), and sesame oil. Whisk everything together until the curry paste is fully dissolved and the mixture is smooth.
- Add the spinach: Add the 3 cups of spinach to the baking dish and toss it gently to coat the leaves evenly with the curry broth, spreading it across the base of the dish.
- Nestle the dumplings: Arrange the frozen dumplings pinched-side down evenly over the spinach and curry base. Spoon some of the coconut curry liquid over the tops of the dumplings to ensure they stay moist while baking.
- Bake covered: Cover the dish tightly with a lid or aluminum foil. Bake in the preheated oven for 20 minutes if using a shallow oven-safe braiser, or 30 to 40 minutes if using a standard 9x9-inch baking pan. Check for tenderness and ensure dumplings are cooked through; adjust time as necessary.
- Garnish and serve: Remove the baking dish from the oven and garnish with chopped cilantro, sliced scallion greens, sesame seeds, and chili crisp. Serve immediately for a delicious and aromatic meal.
Notes
- Use mild or spicy Thai red curry paste based on your heat preference.
- Fish sauce adds umami depth, but substituting lime juice keeps it lighter and vegetarian-friendly.
- Adjust soy sauce quantity if you prefer lower sodium content.
- Frozen dumpling count depends on the size of your dish; ensure dumplings are spaced without overcrowding.
- Covering the dish during baking traps steam to cook dumplings evenly and keeps them tender.
- Chili crisp adds a nice crunchy heat, but you can adjust amount based on your spice tolerance.
