Ingredients
Main Ingredients
- 1 small beet, trimmed
- 1½ cups cooked chickpeas, drained and rinsed
- ⅓ cup smooth tahini
- 2 tablespoons extra-virgin olive oil, plus more for drizzling
- 2 tablespoons fresh lemon juice, plus more to taste
- 1 garlic clove
- ½ teaspoon ground coriander
- ½ teaspoon ground cumin
- ½ teaspoon sea salt, plus more for sprinkling
- 5 tablespoons water, plus more as needed
Garnishes and Serving
- Sesame seeds, for garnish
- Lemon zest, for garnish
- Finely chopped fresh parsley or fresh mint leaves, for garnish
- Warm pita and/or veggies, for serving
Instructions
- Preheat Oven: Preheat the oven to 400°F to prepare for roasting the beet, which enhances its natural sweetness and earthy flavor.
- Roast Beet: Place the trimmed beet on a sheet of foil. Drizzle generously with olive oil and sprinkle with salt. Wrap the beet securely in the foil and place it on a baking sheet. Roast for 35 to 50 minutes, or until the beet is fork-tender, ensuring it’s fully cooked and soft.
- Cool and Peel Beet: Remove the beet from the oven and unwrap the foil. Allow the beet to cool until it can be handled comfortably. To peel, hold it under running water and slide the skin off with your hands. Once peeled, roughly chop the beet into pieces for processing.
- Blend Ingredients: In a food processor, combine the roasted beet, cooked chickpeas, tahini, olive oil, fresh lemon juice, garlic clove, ground coriander, ground cumin, salt, and water. Process until very smooth, adding more water as needed to reach your desired creamy consistency. Taste and adjust seasoning with extra lemon juice or salt if desired.
- Serve and Garnish: Transfer the beet hummus to a serving dish. Drizzle with olive oil and garnish with sesame seeds, lemon zest, and freshly chopped parsley or mint. Serve alongside warm pita bread and fresh veggies for dipping.
