Ingredients
Chili Base
- 1 1/2 cups soy chunks (dry)
- 1 medium bell pepper (chopped)
- 3 cloves garlic (chopped)
- 2 tablespoons sweet onion (chopped)
- 2 teaspoons light olive oil
- 1 can (15.5 ounces) white beans (drained and rinsed)
- 2/3 cup frozen corn
- 4 cups water
- 1 teaspoon Better than Bouillon
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon chili powder (or to heat preference)
- Salt and black pepper (to taste)
Dairy-Free Ingredients
- 2 cups non-dairy milk (unsweetened and unflavored)
- 1/2 cup vegan Mexican-style shreds (or any other flavor you like)
Instructions
- Rehydrate Soy Chunks: Cover the dry soy chunks with 2 cups (480ml) of boiling water and set aside for 10 minutes to soften.
- Sauté Vegetables: While the soy chunks are soaking, heat 2 teaspoons of light olive oil in a large pot over medium heat. Add the chopped bell pepper, garlic, and sweet onion. Sauté for 5 to 7 minutes until fragrant and softened.
- Add Beans and Corn: Stir in the drained white beans and frozen corn into the pot with the sautéed vegetables.
- Add Soy Chunks: Drain the rehydrated soy chunks without squeezing out excess water and add them to the pot.
- Add Liquids and Seasonings: Pour in 2 cups of non-dairy milk and 4 cups of water. Stir in 1 teaspoon Better than Bouillon, garlic powder, onion powder, chili powder, salt, and black pepper. Then add the vegan Mexican-style shreds.
- Simmer the Chili: Bring the mixture to a boil over high heat. Once boiling, reduce heat and let it cook uncovered for 30 minutes, stirring occasionally until the chili thickens.
- Final Seasoning and Serve: Taste the chili and adjust seasoning if necessary. Remove from heat.
- Garnish and Enjoy: Serve with your favorite toppings such as vegan sour cream or vegan yogurt, cilantro, pickled red onions, or other preferred garnishes.
Notes
- You can adjust the chili powder to control the heat level to your preference.
- If soy chunks are not available, you may substitute with textured vegetable protein (TVP) or shredded jackfruit for a different texture.
- For thicker chili, allow simmering a few minutes longer or reduce the amount of water slightly.
- Use unsweetened and unflavored non-dairy milk to avoid altering the chili’s savory flavor.
- Serve with warm crusty bread or tortilla chips for a complete meal.
