Ingredients
Main Ingredients
- 1 1/2 cup water (350 ml)
- 1/2 cup cashews (65 g)
- 10 oz gluten free penne pasta (280 g) (or regular penne if not gluten free)
- 20 oz roasted garlic marinara sauce (566 g)
- 2 cups spinach (60 g)
- 1 cup vegan cheese (100 g) (or substitute 1/3 cup vegan parmesan or nutritional yeast)
Optional Spices
- 1 tsp onion powder
- 1 tsp garlic powder
- 1/4 tsp cayenne pepper
- 2 tsp dried oregano
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for baking the pasta dish.
- Prepare Cashew Milk: Add the soaked cashews and water into a blender and blend until smooth to create a thick cashew milk. Alternatively, you can use 350 ml of cashew milk or any non-dairy milk.
- Combine Ingredients: In an 8×8 inch baking dish, add the gluten-free penne pasta, blended cashew milk, roasted garlic marinara sauce, and any optional spices you choose to use (onion powder, garlic powder, cayenne, oregano). Stir well to combine all ingredients evenly.
- Bake the Pasta: Cover the baking dish with foil and bake for 35 minutes or until the pasta is cooked through and soft.
- Add Spinach and Cheese: Remove the foil, stir in fresh spinach, and top the dish with vegan cheese.
- Broil for Finish: Place the baking dish back into the oven and broil for 4-5 minutes until the vegan cheese is melted and slightly golden.
- Serve: Serve immediately while hot and enjoy your creamy vegan no boil pasta bake!
Notes
- You can soak cashews overnight or for at least 2 hours to ensure smooth cashew milk.
- If you prefer, substitute the cashew milk with any other plant-based milk like almond or oat milk.
- Use gluten-free pasta to keep the dish gluten-free, or regular pasta if gluten is not a concern.
- Adding the optional spices enhances flavor but can be omitted if desired.
- Ensure the baking dish is adequately covered during the first bake to cook pasta evenly without drying.
- Broiling at the end gives the vegan cheese a delightful golden and melty texture.
