Ingredients
Chickpea Salad
- 1 (15-ounce) can chickpeas, drained and rinsed
- ¼ cup celery, finely diced
- 3 tablespoons red onion, finely chopped
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh dill, chopped
- 3 tablespoons mayonnaise or Greek yogurt
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- ½ teaspoon garlic powder
- ½ teaspoon salt (or to taste)
- ¼ teaspoon black pepper
To Serve
- 6–8 slices bread (sourdough, whole grain, or sandwich bread)
- Lettuce (or mixed greens or sprouts)
- Avocado slices (optional)
Instructions
- Mash the Chickpeas: Place the chickpeas in a medium mixing bowl. Using a fork or potato masher, mash them until they are mostly broken down but still slightly chunky to maintain texture.
- Add Vegetables and Herbs: Stir in the finely diced celery, chopped red onion, parsley, and dill until evenly combined with the mashed chickpeas.
- Prepare the Dressing: In a small bowl, whisk together the mayonnaise (or Greek yogurt), lemon juice, Dijon mustard, garlic powder, salt, and black pepper until the mixture is smooth and well blended.
- Combine Salad and Dressing: Pour the dressing over the chickpea mixture and stir thoroughly until all ingredients are well coated. Taste and adjust seasoning with extra salt, pepper, or lemon juice as desired.
- Assemble the Sandwiches: Spread a generous scoop of the chickpea salad onto a slice of your chosen bread. Top with lettuce and avocado slices if using, then place another slice of bread on top to complete the sandwich. Serve immediately.
Notes
- You can substitute mayonnaise with vegan mayo or Greek yogurt for creaminess while keeping it vegan or vegetarian.
- Adding avocado slices is optional but adds healthy fats and a creamy texture.
- Use fresh herbs like parsley and dill for best flavor, but dried herbs can be used in a pinch.
- Adjust the texture by mashing chickpeas more or less, depending on your preference.
- This chickpea salad can also be served on crackers or as a wrap filling for variation.
