Description

A quick and easy Tortilla Pizza recipe perfect for a fast, delicious meal. Using flour tortillas as the base makes this pizza crispy and light, topped with classic pizza sauce, mozzarella, olives, mushrooms, and a hint of oregano and red pepper flakes for added flavor. Ready in just 10 minutes, this recipe is great for a single serving or easy to scale up.

Ingredients

Pizza Base

  • 2 10-inch flour tortillas

Pizza Sauce and Cheese

  • ½ cup pizza sauce (divided)
  • ½ cup shredded mozzarella cheese (divided)
  • ½ teaspoon oregano (divided)

Toppings

  • ¼ cup olives (sliced)
  • ¼ cup mushrooms (sliced)
  • ¼ teaspoon crushed red pepper

Instructions

  1. Preheat Oven: Preheat the oven to 425°F (220°C). Place a baking sheet or pizza stone inside to heat while you prepare the pizza to ensure a crispy crust.
  2. Prepare Bottom Tortilla: Lay one tortilla on a piece of parchment paper. Evenly spread ¼ cup of pizza sauce over it, then sprinkle ¼ cup shredded mozzarella cheese on top. Season with ¼ teaspoon oregano for flavor.
  3. Add Second Tortilla Layer: Place the second tortilla on top of the first. Spread the remaining ¼ cup pizza sauce over this tortilla, leaving a slight border around the edges to mimic a traditional crust. Add the remaining mozzarella cheese and oregano evenly over the sauce.
  4. Add Toppings: Distribute the sliced olives, sliced mushrooms, and crushed red pepper flakes evenly as toppings over the cheese layer to enhance flavor and texture.
  5. Bake the Pizza: Transfer the assembled pizza on the parchment paper onto the preheated baking sheet or pizza stone. Bake for 5–7 minutes until the cheese melts and bubbles, the toppings soften, and the tortilla edges turn golden and crispy.
  6. Serve: Remove from the oven, slice the pizza into 4 or 6 pieces with a pizza cutter, and serve immediately while hot and crispy.

Notes

  • Using a pizza stone helps achieve a crispier crust but is optional. A baking sheet works well too.
  • Feel free to customize toppings according to your preference or dietary needs.
  • Keep an eye on the pizza while baking to prevent burning because tortillas crisp quickly at high temperatures.
  • This recipe serves one; to serve more, multiply ingredients accordingly and bake in batches or use larger tortillas.
