Ingredients
Pie Crust
- 1 recipe for double pie crust
Filling
- 2 1/4 lbs Granny Smith apples (about 7 cups thinly sliced)
- 1 1/2 tsp cinnamon
- 8 Tbsp unsalted butter
- 3 Tbsp all-purpose flour
- 1/4 cup water
- 1 cup granulated sugar
Egg Wash
- 1 egg
- 1 Tbsp water
Instructions
- Prepare Pie Crust: Make the double pie crust recipe and chill according to instructions. Preheat your oven to 425˚F (220˚C).
- Make Filling Sauce: In a medium saucepan over medium heat, melt the butter. Whisk in 3 tablespoons of flour and simmer for 1 minute, stirring constantly to avoid lumps. Slowly whisk in 1/4 cup water and 1 cup sugar, bringing the mixture to a boil. Reduce heat and simmer for 3 minutes, whisking frequently until the sauce thickens, then remove from heat.
- Prepare Apples: Peel, core, and thinly slice the apples. Place them in a large bowl, sprinkle with cinnamon, and toss to combine. Pour the warm filling sauce over the apples and stir well to coat.
- Assemble Pie Bottom: Lightly flour your work surface and roll out the bottom pie crust into a 12-inch diameter circle. Carefully transfer it to a 9-inch pie plate by wrapping it around your rolling pin. Add the apple mixture to the crust, mounding slightly in the center but avoiding getting filling on the edge to ensure proper sealing.
- Create Lattice Top: Roll out the second crust into an 11-inch round. Use a pizza cutter to cut the dough into 10 even strips. Arrange the strips over the apples in a woven lattice pattern for a classic look. Beat together the egg and 1 tablespoon of water, then brush this egg wash evenly over the lattice to promote browning.
- Bake the Pie: Bake in the preheated oven at 425˚F for 15 minutes. Then reduce the temperature to 350˚F (175˚C) and continue baking for 45 minutes more or until the apples are tender and the filling bubbles through the lattice vents for at least 5 minutes.
- Rest and Serve: Remove the pie from the oven and let it rest at room temperature for 1 hour before serving to allow the filling to set.
Notes
- Use tart Granny Smith apples for the best balance of sweet and tangy flavors and texture that holds up well when baked.
- Chilling the pie crust before baking helps prevent shrinking and promotes flakiness.
- Applying an egg wash on the lattice crust gives it a beautiful golden brown finish.
- Let the pie rest after baking to ensure the filling sets properly and slices cleanly.
- You can cover the pie edges with foil during baking if they brown too quickly.
