Description

These Texas Roadhouse Rolls are soft, buttery, and slightly sweet dinner rolls that perfectly complement any meal. Made from a yeast-based dough, they are tender on the inside with a golden, buttery crust. The recipe involves a two-step rising process, resulting in fluffy and delicious rolls reminiscent of the famous restaurant style.

Ingredients

Dough

  • 1 packet active dry yeast
  • 1 ¼ cups warm milk (about 105-110°F)
  • ⅓ cup granulated sugar
  • ¼ cup unsalted butter (room temperature, ½ stick)
  • 1 large egg (room temperature)
  • 1 teaspoon kosher salt
  • 3 ½ - 4 cups all-purpose flour (plus more for kneading)

Topping

  • 3 Tablespoons unsalted butter (melted)

Instructions

  1. Activate Yeast: In a small bowl, combine warm milk and granulated sugar. Sprinkle yeast over the surface and let it sit for about 5 minutes until the mixture becomes foamy, indicating the yeast is active.
  2. Prepare Dough Base: Pour the yeast mixture into a large mixing bowl. Add the room temperature butter, egg, kosher salt, and 2 cups of the flour. Beat on medium speed until the batter is smooth.
  3. Form Dough: Gradually add the remaining flour, mixing until a soft ball of dough forms. Increase the mixer speed to medium-high and beat for an additional 2-3 minutes until the dough is tacky but not sticky. If too sticky, add flour by one tablespoon increments.
  4. First Rise: Lightly grease a large bowl and place the dough ball inside, turning once to coat in oil. Cover with a clean dish towel and place in a warm spot to rise for 45-60 minutes, or until doubled in size.
  5. Prepare for Shaping: Gently punch down the risen dough. Lightly flour a work surface and turn the dough out. Knead lightly if necessary. Let the dough rest a few minutes while you prepare baking sheets with silicone mats or coat them with non-stick spray.
  6. Shape Rolls: Roll the dough out into a 12x8 inch rectangle about ½ inch thick. Using a sharp knife, cut the dough into 24-30 even pieces.
  7. Second Rise: Arrange the pieces on the prepared baking sheets. Cover with a dish towel and set in a warm place to rise again for 45-60 minutes until nearly doubled in size.
  8. Preheat Oven: About 20 minutes before the end of the second rise, preheat your oven to 350°F (175°C).
  9. Bake Rolls: Place the baking sheets in the preheated oven and bake the rolls for 12-15 minutes or until they turn golden brown on top.
  10. Finish with Butter: Remove rolls from oven and immediately brush the tops with melted butter for a rich, glossy finish.

Notes

  • Make sure the milk is warm but not hot to avoid killing the yeast.
  • Use room temperature ingredients to help the dough rise evenly.
  • Gently knock down dough after first rise to avoid overworking it.
  • Brush with melted butter right after baking for best flavor and texture.
  • For fluffier rolls, do not add excessive flour during kneading; dough should be slightly tacky.
  • The dough can be made ahead and refrigerated overnight for convenience; bring to room temperature before shaping.
