Description
Stuffed Grape Leaves are a classic Mediterranean appetizer featuring tender grape leaves filled with a flavorful mixture of long-grain rice, fresh herbs, toasted pine nuts, and aromatic sautéed onions and garlic. Simmered gently to perfection, these savory parcels make a delightful starter or light meal served warm or cold.
Ingredients
Rice
- ½ cup long-grain rice
Grape Leaves
- 20 to 30 jarred grape leaves
Filling
- ¼ cup + 3 tablespoons olive oil (divided)
- 1 small yellow onion (diced)
- 2 cloves garlic (minced)
- 2 tablespoons lemon juice
- 2 tablespoons chopped fresh dill
- 1 tablespoon chopped fresh parsley
- 2 tablespoons toasted pine nuts
- 1 teaspoon sea salt
- ½ teaspoon freshly ground black pepper
Instructions
- Soak the Rice: Place the long-grain rice in warm water and let it soak for 20 minutes to soften. Then drain the rice thoroughly.
- Prepare the Grape Leaves: Rinse the jarred grape leaves under cold water using a colander. Bring a pot of water to a boil, then blanch the leaves by dropping them into the boiling water for about 3 minutes until softened. Drain the leaves and set them aside to cool.
- Make the Filling: Heat 1 tablespoon of olive oil in a large saucepan over medium-high heat. Add the diced onions and sauté until translucent, about 2 minutes. Add the minced garlic and cook for another 15 seconds until fragrant, then remove the pan from heat. Stir in the soaked rice, lemon juice, 2 tablespoons of olive oil, chopped fresh dill, parsley, toasted pine nuts, sea salt, and freshly ground black pepper until well combined.
- Stuff the Grape Leaves: Lay one grape leaf flat with the stem end facing you. Place about 2 tablespoons of filling near the stem edge, about ½ inch from the edge. Fold the stem end over the filling, then fold the sides toward the center. Roll tightly from the stem-end over the filling and folded sides until sealed. Repeat this process with the remaining grape leaves and filling. You may have extra filling which can be discarded or used to fill additional leaves if available.
- Cook the Stuffed Grape Leaves: Arrange the stuffed grape leaves seam-side down in a large, heavy-bottomed pot in close proximity to prevent them from unrolling. Drizzle ¼ cup of olive oil over the top and add enough water to just cover the stuffed leaves. Place a large dinner plate on top to keep the rolls submerged. Bring the water to a boil, then reduce heat to a simmer. Cover and cook for 30 to 45 minutes, or until the water is fully absorbed and the rice is tender.
- Serve: Remove the pot from heat and let the stuffed grape leaves cool slightly. Serve warm or chilled as an appetizer or light meal.
Notes
- You can use fresh grape leaves if available, but they need to be blanched similarly before stuffing.
- For a vegetarian option, no meat is added; this recipe is perfect as is.
- Leftover filling can be refrigerated for a few days or discarded if not used.
- To prevent grape leaves from sticking while cooking, arrange them tightly and use a plate to keep them submerged.
- Adjust lemon juice to taste if you prefer a tangier flavor.
