Description

This creamy and flavorful Spinach Cheese Dip combines melted American and cream cheese with tangy Rotel tomatoes and seasoned spinach, creating the perfect appetizer for any gathering. Ready in just 10 minutes, this dip pairs wonderfully with chips or fresh veggies for a delicious party snack.

Ingredients

Dip Ingredients

  • 1 box (10 oz) frozen chopped spinach
  • 1 lb American cheese, cubed
  • 1 box (8 oz) cream cheese, cubed
  • 1 can (10 oz) Rotel, undrained
  • ½ cup milk
  • ¼ teaspoon garlic powder
  • Ground cayenne, to taste

For Serving

  • Chips or veggies, for dipping

Instructions

  1. Prepare the Spinach: Microwave the frozen chopped spinach according to the package instructions. Once heated, thoroughly drain the spinach by pressing it through a mesh strainer and squeezing out excess liquid using cheesecloth or paper towels. Set the drained spinach aside.
  2. Melt the Cheeses and Combine Ingredients: In a large pot over medium-low heat, add the cubed American cheese, cream cheese, undrained Rotel tomatoes, milk, and garlic powder. Cook gently, stirring occasionally to prevent the cheese from burning, until all the cheeses are fully melted and the mixture is smooth.
  3. Add Spinach and Season: Stir the thoroughly drained spinach into the melted cheese mixture. Season the dip to taste by adding several dashes of ground cayenne pepper for a touch of heat.
  4. Serve Warm: Serve the dip immediately with chips and fresh vegetables for dipping. Alternatively, you can transfer the dip to a slow cooker to keep it warm for an extended period during your gathering.

Notes

  • Be sure to drain the spinach thoroughly to avoid a watery dip.
  • Adjust the cayenne pepper according to your desired spice level.
  • Using a slow cooker to keep the dip warm is ideal for parties and gatherings.
  • You can substitute American cheese with cheddar or Monterey Jack for a different flavor profile.
