Ingredients
Crust Ingredients
- 8 full sheets graham crackers (120 g, ground)
- ½ cup roughly ground almonds or almond flour (45 g)
- ¼ cup granulated sugar (50 g)
- 2 tablespoons unsweetened cocoa powder (10 g)
- 5 tablespoons unsalted butter, melted (70 g)
Cheesecake Filling
- 16 oz cream cheese, room temperature (454 g)
- ¾ cup granulated sugar (150 g)
- 1 large egg, room temperature
- ½ cup non-fat yogurt, room temperature (113 g)
- 1 teaspoon vanilla paste or pure vanilla extract
- 1 teaspoon fine sea salt
Chocolate Decoration
- ¼ cup chocolate chips or chocolate chunks (50 g), melted
Instructions
- Preheat Oven: Preheat your oven to 325°F (163°C) to prepare for baking the tart.
- Prepare Chocolate Almond Crust: In a food processor, pulse graham crackers, sugar, and cocoa powder until fine crumbs form. Mix the crumbs with roughly ground almonds and melted butter until well combined.
- Form Crust Base: Press the crumb mixture evenly into the bottom of a 9-inch tart pan with a removable bottom, ensuring it is firmly packed.
- Make Cheesecake Filling: Using a stand mixer, beat the cream cheese and sugar together until smooth. Add the egg and blend until fully incorporated. Mix in the yogurt, vanilla paste, and salt, continuing to beat until the filling is silky smooth.
- Fill the Crust: Pour the cheesecake filling into the prepared crust, smoothing the top evenly.
- Bake the Tart: Place the tart in the preheated oven and bake for 30-45 minutes, or until the cheesecake is set but still slightly wobbly in the center.
- Cool the Tart: Remove the tart from the oven and cool it on a wire rack. Once cooled, refrigerate for at least two hours to fully set the cheesecake before decorating.
- Melt Chocolate for Decoration: Melt chocolate chips over a bain-marie or in 15-30 second intervals in the microwave at half power, stirring until smooth.
- Create Chocolate Spider Web: Transfer melted chocolate to a piping or parchment bag and carefully pipe a spider web design over the chilled cheesecake tart.
- Set Decoration: Return the decorated tart to the refrigerator to allow the chocolate spider web to harden before serving.
Notes
- Ensure all dairy ingredients are at room temperature to avoid lumps in the cheesecake filling.
- Using a tart pan with a removable bottom helps to easily remove the tart without damaging the crust or filling.
- Allow the tart to chill sufficiently before piping the chocolate decoration for best results.
- Substitute almond flour with finely ground almonds for a coarser crust texture if preferred.
- Use high-quality chocolate chips to ensure a smooth and glossy decoration.
