Ingredients
For the Crispy Rice
- 1 cup Japanese sushi rice
- 1 ½ cups water
- 1 teaspoon sugar
- 1 ½ tablespoon rice wine vinegar
- Pinch of sea salt
- 4 tablespoons neutral oil such as canola oil
For the Spicy Tuna Mixture
- 7 oz / 200 g fresh sushi grade ahi tuna
- 2 tablespoons Japanese kewpie mayonnaise (or regular mayonnaise)
- 1 tablespoon sriracha (adjust to taste)
- 1 teaspoon soy sauce
- Small drizzle of sesame oil
For Toppings and Serving
- Furikake
- Jalapeño slices
- Avocado slices or smashed avocado
- Dipping sauce (soy sauce or preferred dipping sauce)
Instructions
- Rinse and Cook the Rice: Rinse the sushi rice thoroughly under cold water about five times until the water runs almost clear to remove excess starch. If cooking on the stove, add the rinsed rice and 1 ½ cups water to a pot and bring to a boil over medium-high heat. Reduce to low-medium heat, cover with a lid, and simmer for 15 minutes. Remove from heat, keeping the lid on, and let the rice steam for an additional 5 minutes.
- Season the Rice: In a small ramekin, whisk together the sugar, rice wine vinegar, and a pinch of sea salt until dissolved. Transfer the cooked rice to a large bowl and gently fold in the vinegar mixture using a wooden spatula or paddle, ensuring the rice is evenly coated without mashing the grains.
- Set the Rice: Line a tray or container with plastic wrap and spread the seasoned rice evenly, pressing down firmly with the back of a spoon to form a compact, flat layer. Refrigerate the rice for 3 hours to firm up. Alternatively, place in the freezer for about 1 hour for quicker setting.
- Cut and Pan-Fry the Rice: Once set, use a sharp knife to cut the rice into even rectangles or squares. Heat the neutral oil in a large skillet over medium-high heat. Carefully pan-fry the rice squares for a few minutes on each side until they turn golden brown and crispy. Transfer them to a cooling rack to retain their crunch.
- Prepare the Spicy Tuna Mixture: Finely dice the sushi-grade tuna and place into a bowl. Add kewpie mayonnaise, sriracha, soy sauce, and a small drizzle of sesame oil. Mix gently to combine. Taste and adjust seasoning or spice level as desired.
- Assemble the Bites: Spoon the spicy tuna mixture onto each crispy rice square. Sprinkle furikake on top, then garnish with jalapeño slices and avocado slices or smashed avocado. Serve immediately with your favorite dipping sauce, such as soy sauce.
Notes
- If short on time, freezing the pressed rice for about an hour speeds up the setting process.
- Adjust sriracha amount to suit your desired spice preference.
- Using kewpie mayonnaise adds an authentic Japanese flavor and creaminess, but regular mayonnaise works as a substitute.
- Ensure you use sushi-grade fresh tuna for safety and best taste.
- The crispy rice squares are best served fresh to retain their crunchiness.
- Furikake adds a nice umami flavor and crunchy texture; you can omit if unavailable.
