Description
Tender and flavorful Slow Cooker Steak Bites made with seared sirloin steak, sweet onions, garlic, and a rich au jus gravy. Perfectly cooked in a slow cooker for a hands-off, melt-in-your-mouth meal that can be served as a hearty appetizer or main dish.
Ingredients
Steak Marinade
- 3 pounds sirloin steak, cut into bite-sized pieces
- 2 teaspoons kosher salt
- 1 teaspoon black pepper
Cooking Ingredients
- 2 tablespoons extra virgin olive oil
- 1 small sweet onion, thinly sliced
- 3 cloves garlic, thinly sliced
- 1 cup unsalted beef stock or broth
- 1 ounce au jus gravy mix (1 packet)
- 4 tablespoons unsalted butter, thinly sliced
- Fresh chopped parsley for garnish (optional)
Instructions
- Season the Steak: Place the bite-sized sirloin steak pieces into a large bowl. Sprinkle with kosher salt and black pepper, then toss thoroughly to ensure each piece is evenly seasoned.
- Sear the Steak: Heat a large skillet over medium-high heat and add half of the olive oil. In batches to avoid overcrowding, sear the steak pieces until browned on all sides. Transfer the seared steak bites to a 6-quart slow cooker. Add more oil to the pan as needed for each batch.
- Add Aromatics: Once all the steak is seared and in the slow cooker, add the thinly sliced sweet onion and garlic. Gently toss them together with the steak bites to combine flavors.
- Prepare the Sauce: Pour the unsalted beef stock into the slow cooker over the steak and aromatics. Sprinkle the au jus gravy mix evenly on top. Then lay slices of the unsalted butter over everything to enrich the sauce as it cooks.
- Slow Cook: Cover the slow cooker with its lid and cook on HIGH for 3 to 4 hours, or on LOW for 6 to 8 hours. Stir the contents every 30 minutes if possible to ensure even cooking and flavor distribution.
- Serve: Once cooked and tender, garnish with fresh chopped parsley if desired. Serve warm as steak bites perfect for snacking or with your favorite sides for a satisfying meal.
Notes
- For best results, sear the steak in batches to avoid steaming and ensure a nice crust.
- If you don’t have au jus gravy mix, a combination of beef broth, Worcestershire sauce, and cornstarch can be used to thicken the sauce.
- Stirring occasionally helps prevent sticking and promotes even cooking in the slow cooker.
- This recipe works well with other cuts of steak suitable for slow cooking, such as chuck or round.
- Leftovers can be refrigerated for up to 3 days and reheat well in a skillet or microwave.
