Description

This Slow Cooker Chuck Roast Chili is a hearty and comforting dish featuring tender chunks of beef, sweet potatoes, and fire-roasted tomatoes simmered with flavorful spices. Perfect for an easy, hands-off meal that delivers rich, deep flavors and satisfying warmth, ideal for chilly days or meal prepping.

Ingredients

Beef and Vegetables

  • 2 lbs. boneless beef chuck or round roast, well-trimmed and cut into 1-inch cubes
  • 1 medium yellow onion, diced
  • 1 green bell pepper, diced
  • 6 garlic cloves, peeled and minced
  • 2 medium sweet potatoes, peeled and cut into ½-inch cubes (about 3 cups)
  • 1 (4-ounce) can diced green chilies

Spices and Liquids

  • 1 tablespoon avocado oil or olive oil
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon fine salt, plus more to taste
  • ½ teaspoon black pepper, plus more to taste
  • 2 (28-ounce) cans fire-roasted diced tomatoes, undrained
  • 3 ounces no-salt-added tomato paste (½ of a 6-ounce can)
  • 1 cup low-sodium beef broth

Optional Toppings

  • Sour cream
  • Sliced avocado
  • Pickled or fresh jalapeno slices
  • Cilantro
  • Cheddar cheese
  • Lime wedges

Instructions

  1. Brown the Meat (Optional but Recommended): Heat the oil in a large skillet or Dutch oven over medium to medium-high heat on the stovetop. Add the cubed beef and cook for 2 to 3 minutes on one side. Flip each piece using tongs or a spatula and continue cooking until the meat is browned on all sides. This step develops flavor and seals in juices. Transfer the browned beef to the slow cooker.
  2. Combine Ingredients in Slow Cooker: Add the browned beef along with diced onion, green bell pepper, minced garlic, sweet potatoes, diced green chilies, chili powder, cumin, salt, black pepper, fire-roasted tomatoes with their juice, tomato paste, and beef broth into the slow cooker. Stir gently to combine all ingredients evenly.
  3. Cook the Chili: Cover the slow cooker and cook on LOW heat setting for 8 hours, or until the beef is very tender and sweet potatoes are cooked through, allowing the flavors to meld beautifully.
  4. Season and Serve: Before serving, taste the chili and adjust the seasoning with additional salt and pepper as needed. Serve hot with your choice of optional toppings such as sour cream, sliced avocado, jalapenos, cilantro, cheddar cheese, and lime wedges to enhance the flavors.

Notes

  • Browning the meat before slow cooking is optional but adds richness and depth to the chili’s flavor.
  • For a spicier chili, consider adding more diced green chilies or fresh jalapenos.
  • You can substitute sweet potatoes with regular potatoes, but sweet potatoes add a nice subtle sweetness balancing the spices.
  • This recipe is perfect for meal prep and tastes even better the next day.
  • Use low-sodium broth and adjust salt to control sodium intake.
