The mixture is seasoned with garlic, soy sauce, rice wine vinegar, and a touch of coconut sugar for a balanced savory-sweet taste, cooked quickly on the stovetop with sesame oil for a delicious umami-packed dish.
Ingredients
For the Mushroom Filling
- 2 tsp sesame oil
- 2 cloves garlic, minced
- 7 oz shiitake mushrooms, minced
- 6 oz water chestnuts, minced
- 1/2 tsp salt
- 1 tbsp soy sauce
- 1 tsp rice wine vinegar
- 2 tsp coconut sugar
For Serving
- 1 head lettuce (for wrapping)
Instructions
- Heat the sesame oil: Place a skillet over medium-high heat and add the sesame oil, allowing it to warm up for a few seconds to release its nutty aroma.
- Sauté garlic: Add the minced garlic to the hot oil and cook it for approximately 30 seconds, stirring constantly to prevent burning and to infuse the oil with garlic flavor.
- Cook shiitake mushrooms: Add the minced shiitake mushrooms to the skillet and cook for about 1 minute, stirring occasionally to begin softening the mushrooms.
- Add water chestnuts and salt: Mix in the minced water chestnuts along with the salt. Continue cooking and stirring for another minute until the mushrooms have softened but are not fully cooked yet.
- Season the mixture: Pour in the soy sauce, rice wine vinegar, and sprinkle the coconut sugar. Stir well to combine all ingredients and cook for an additional minute until the mushrooms are cooked through and flavors meld together.
- Assemble the wraps: Spoon the warm mushroom and water chestnut mixture into individual lettuce leaves. Serve immediately while still warm for a fresh, crunchy, and savory appetizer or light meal.
Notes
- Use fresh, firm lettuce like butter lettuce or Bibb for easy wrapping and better texture.
- Adjust the soy sauce and salt according to your taste and dietary needs.
- For added protein, consider adding cooked tofu or chickpeas to the mixture.
- These wraps are best served immediately but can be refrigerated for up to 1 day if prepared in advance.
- To make this dish gluten-free, use tamari instead of regular soy sauce.
