Perfect for a healthy and easy weeknight meal served with optional steamed rice.
Ingredients
For the Sauce
- 1 tablespoon brown sugar
- 1 teaspoon toasted sesame oil
- ½ cup low-sodium soy sauce or tamari
- 2 tablespoons minced fresh cilantro
- 1 teaspoon minced peeled fresh ginger
- 2 garlic cloves, minced
- 1 tablespoon sesame seeds
For the Main Dish
- 1 (1½-pound) salmon fillet, cut into 4 pieces
- 3 cups broccoli florets
- 4 medium carrots, peeled and cut into 3-inch matchsticks
- 3 green onions, white and green parts, minced (optional)
- 4 cups cooked rice, for serving (optional)
Instructions
- Preheat the oven: Preheat your oven to 400°F with a rack positioned in the center to ensure even cooking of the salmon and vegetables.
- Make the sauce: In a small bowl, combine brown sugar, toasted sesame oil, low-sodium soy sauce or tamari, minced fresh cilantro, peeled minced fresh ginger, minced garlic cloves, and sesame seeds. Stir the mixture well until the sugar dissolves and the ingredients are fully incorporated.
- Arrange on sheet pan: Place the salmon pieces, broccoli florets, and carrot matchsticks onto a large rimmed sheet pan. Drizzle half of the prepared sauce evenly over the salmon and vegetables, then toss gently to coat everything thoroughly.
- Bake the dish: Bake in the preheated oven for about 12 minutes, or until the salmon flakes easily with a fork and the vegetables are tender. If the vegetables require additional cooking, carefully transfer the salmon to a serving platter to rest and continue roasting the vegetables until they reach desired tenderness.
- Garnish and serve: Once cooked, drizzle the remaining sauce over the salmon and vegetables, sprinkle with minced green onions if desired, and serve warm. Accompany with cooked rice for a complete meal.
Notes
- For a gluten-free option, use tamari instead of soy sauce.
- Cut the carrots uniformly to ensure even roasting and tenderness.
- Salmon can be replaced with another firm fish if preferred, adjusting cooking time accordingly.
- To add more flavor, marinate the salmon in half the sauce for 15-20 minutes prior to roasting.
- Leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
