Ingredients
Pizza Base
- 1/2 pound pizza dough, homemade or store-bought
Buffalo Chicken Topping
- 1 cup cooked shredded chicken
- 1/2 cup buffalo sauce (homemade sauce in notes)
- 2 tablespoons chopped fresh chives
- 2 teaspoons dried parsley
- 1 teaspoon dried dill
Herb Seasoning
- 1/2 cup fresh cilantro or parsley, chopped
- 1-2 cloves garlic, grated
- 1/2-1 teaspoon fennel seeds
- 1 pinch red pepper flakes
Cheeses and Sauce
- 1/3 cup ranch dressing (homemade sauce in notes)
- 1/4 cup crumbled blue cheese (optional)
- 1 cup shredded whole milk mozzarella
- 1 cup shredded cheddar cheese
- 1/2 cup grated parmesan or asiago cheese
Instructions
- Preheat Oven: Position the oven rack in the upper third of your oven and preheat to 500°F (260°C) for at least 30 minutes, preferably 1-2 hours ahead, ensuring thorough heating. If you have a baking stone, preheat it along with the oven to help achieve a crispy crust.
- Prepare Dough: Lightly oil a quarter sheet pan and place the pizza dough on it. Gently press and stretch the dough until it covers most of the sheet pan. Cover the dough and let it rest while you prepare the toppings, allowing it to relax and slightly rise.
- Make Buffalo Chicken Mixture: In a bowl, combine the cooked shredded chicken with buffalo sauce, chopped fresh chives, dried parsley, and dried dill. Mix well so the chicken is evenly coated with the flavorful sauce and herbs.
- Prepare Herb Seasoning: In another bowl, mix the chopped fresh cilantro or parsley with grated garlic cloves, fennel seeds, and a pinch of red pepper flakes. This seasoning blend will add aromatic layers on top of the pizza.
- Assemble Pizza: Spread the ranch dressing evenly over the pizza dough; you may not need the entire amount. Optionally, drizzle additional buffalo sauce over the ranch for extra heat. Next, layer the buffalo chicken mixture evenly over the base, followed by sprinkling mozzarella, cheddar, parmesan or asiago cheese, and blue cheese if using. Finally, sprinkle the prepared herb seasoning over the top of the pizza.
- Bake: Slide the assembled pizza into the preheated oven and bake for 10 minutes. Then rotate the pizza to promote even baking and bake for an additional 3-5 minutes or until the crust is golden brown and the cheese is melted and bubbly.
- Finish and Serve: Remove the pizza from the oven and top with fresh cilantro and additional buffalo sauce or ranch dressing as desired. Slice and enjoy your flavorful, spicy buffalo chicken pizza!
Notes
- For the homemade buffalo sauce, combine hot sauce with melted butter and a pinch of garlic powder to taste.
- Using a baking stone helps produce a crispier crust but is optional.
- Blue cheese is optional but adds a tangy contrast to the spicy buffalo flavors.
- Adjust the amount of red pepper flakes depending on your heat tolerance.
- Letting the pizza dough rest after shaping can improve crust texture.
- If you prefer a thicker crust, use less dough or bake slightly longer to ensure thorough cooking.
