- Kosher salt, to taste
- Fresh cracked pepper, to taste

- 1/2 cup sour cream, optional
Garnish
- Fresh tomatoes, chopped (for garnish)
- Chopped cilantro (for garnish)
- Sliced green onion (for garnish)
- Tortilla chips, for serving
Instructions
- Heat the pan: Place a large cast iron skillet or saute pan over medium heat to warm up.
- Cook the ground beef: Add the ground beef to the hot pan and use a spatula to crumble and cook it until fully browned and no longer pink.
- Season the beef: Stir in the taco seasoning thoroughly, ensuring the beef is evenly coated with the spices.
- Add cheese and tomatoes: Lower the heat slightly and add the cubed Velveeta cheese and entire can of Rotel tomatoes with their juices—do not drain the tomatoes.
- Melt and combine: Reduce the heat to medium-low and stir occasionally as the cheese melts and blends with the beef and tomatoes, creating a smooth, creamy dip.
- Incorporate sour cream (optional): Remove the pan from heat and let the dip sit for a couple of minutes. Stir in the sour cream if using, then season with salt and freshly cracked pepper to taste.
- Garnish and serve: Top the dip with fresh chopped tomatoes, cilantro, and sliced green onions. Serve warm with tortilla chips for dipping.
