Ingredients
Chicken and Cauliflower
- 1.5-2 lbs boneless chicken thighs, cut into 1-inch pieces
- 1 head of cauliflower, trimmed and cut into small florets
Seasoning and Dressing
- 1/3 cup olive oil
- 2 tbsp date syrup
- 1 tbsp paprika
- 1 tbsp smoked paprika
- 1 tsp cumin
- 1 tsp salt
- 1/2 tsp turmeric
- 1/2 tsp black pepper
Garnish
- Fresh parsley (or cilantro), to top
Instructions
- Preheat the Oven: Preheat your oven to 425°F (220°C) to ensure it reaches the right temperature for roasting.
- Prepare the Cauliflower: Trim the stem from the cauliflower and chop it into small, bite-sized florets. Spread them evenly on a large baking sheet.
- Prepare the Chicken: Cut the boneless chicken thighs into 1-inch pieces. Add them to the baking sheet with the cauliflower to prepare for seasoning.
- Season the Ingredients: Drizzle the olive oil and date syrup over the chicken and cauliflower. Sprinkle the paprika, smoked paprika, cumin, salt, turmeric, and black pepper on top. Toss thoroughly to coat everything evenly with the spices and oil mixture.
- Roast the Dish: Place the baking sheet in the preheated oven and roast for 30 minutes, allowing the chicken to cook through and the cauliflower to become tender and slightly caramelized.
- Broil for Finish: For extra crispiness and a golden finish, set the baking sheet under the broiler for 2 minutes at the end of cooking, watching closely to avoid burning.
- Garnish and Serve: Remove from the oven and sprinkle freshly chopped parsley or cilantro over the top. Serve warm, optionally over rice with pickled beets for an added tangy contrast.
Notes
- You can substitute fresh cilantro for parsley depending on your preference.
- If you prefer a spicier dish, add a pinch of cayenne pepper to the seasoning mix.
- Make sure to cut chicken and cauliflower into similar sizes for even cooking.
- Date syrup adds a subtle sweetness that balances smoky and savory spices; honey can be used as an alternative.
- Use a rimmed baking sheet to prevent any juices from spilling over while roasting.
