Ingredients
Main Ingredients
- 1 tablespoon high-heat oil
- 1 yellow onion, chopped
- 2 cloves garlic, diced
- 2 teaspoons cumin
- 1 teaspoon smoked paprika
- ½ teaspoon salt
- 2 (15-ounce) cans black beans
- ½ cup water
- 2 tablespoons tomato paste
- 3 cups cooked brown rice
- 2 limes, juiced (plus more to taste)
- Chopped cilantro (optional)
- Salt and pepper, to taste
- 6 burrito-sized tortillas
Instructions
- Cook Aromatics: In a large pan with a lid, heat the high-heat oil over medium heat. Add the chopped onion and cook until translucent, approximately 3 minutes, stirring occasionally to prevent burning.
- Add Garlic: Add the diced garlic to the pan and cook for another 1 minute, stirring to ensure it doesn't brown too quickly.
- Season: Stir in the cumin and smoked paprika to coat the onions and garlic evenly, releasing aromas of the spices.
- Simmer Beans: Add the drained black beans, water, and tomato paste to the pan. Mix well, then cover and let simmer over low heat for 5–7 minutes, allowing flavors to meld and the mixture to thicken slightly.
- Combine Rice and Flavorings: Turn off the heat. Add the cooked brown rice, lime juice, and chopped cilantro if using. Stir thoroughly until everything is well combined. Season with additional salt and pepper to taste.
- Soften Tortillas: Stack the tortillas on a microwave-safe plate and cover with a damp paper towel. Microwave for 10 seconds, then flip the stack and microwave for another 10 seconds to make them pliable for rolling.
- Assemble Burritos: Lay out one tortilla and spoon about 1 cup of the filling near one edge. Fold the edge over the filling, fold in the sides, and roll tightly to form a burrito. Repeat this process with the remaining tortillas and filling.
- Freeze Burritos: Wrap each burrito individually in freezer paper or foil. Place in the freezer to store for later use.
- Reheat Burritos: For microwave reheating, unwrap the burrito, wrap it in a damp paper towel, and microwave for 2–3 minutes or until heated through. For toaster oven reheating, heat at 375°F (190°C) for 20 minutes or until warmed throughout.
- Serve: Serve the reheated burritos with your favorite salsa or condiments for an enhanced flavor experience.
Notes
- For extra flavor, add a pinch of cayenne pepper or chili powder when adding spices.
- Use corn tortillas for a gluten-free option if preferred.
- These burritos can be customized by adding sautéed vegetables, cheese, or avocado when assembling.
- To prevent sogginess after freezing, ensure burritos are wrapped tightly and thawed appropriately before reheating.
- Leftover burrito filling can also be used as a filling for tacos or as a topping for salads.
