Description

Reuben Nachos are a delicious twist on the classic Reuben sandwich, combining crispy potato chips with warm corned beef, tangy sauerkraut, and creamy Swiss cheese sauce. Topped with scallions and a drizzle of Thousand Island dressing, this appetizer is perfect for sharing and packed with bold flavors.

Ingredients

Nachos Base

  • 16 ounces thick potato chips (homemade or deli style)
  • ¾ pound thick-cut deli corned beef, chopped and warmed
  • ¾ cup Frank’s Kraut, drained, chopped and warmed
  • 2 tablespoons Thousand Island dressing
  • 2 tablespoons scallions, chopped

Swiss Cheese Sauce

  • 1 tablespoon butter
  • 1 tablespoon flour
  • 1 cup milk
  • 1 cup shredded Swiss cheese

Instructions

  1. Prepare the Chips: Place the thick potato chips evenly on a sheet pan, creating a base for the toppings.
  2. Make the Cheese Sauce: In a small saucepan, melt the butter over medium heat. Whisk in the flour to form a smooth roux and cook for about 1 minute. Gradually whisk in the milk and continue stirring until the mixture thickens, about 2 minutes. Remove from heat and stir in the shredded Swiss cheese until fully melted and smooth.
  3. Assemble the Nachos: Pour the warm Swiss cheese sauce evenly over the potato chips on the sheet pan.
  4. Add Toppings: Sprinkle the warmed chopped corned beef and drained, chopped sauerkraut over the cheesy chips. Add the chopped scallions and drizzle Thousand Island dressing over the top for authentic Reuben flavor.
  5. Serve: Serve the nachos hot immediately to enjoy the melty cheese and savory toppings at their best.

Notes

  • Use thick-cut potato chips for the best texture and to hold the toppings well.
  • Warming the corned beef and sauerkraut before assembling ensures the nachos stay hot when served.
  • For a spicier kick, add some sliced jalapeños on top.
  • The cheese sauce should be smooth and pourable; if it thickens too much, add a splash of milk to loosen.
