Description

This Reuben Dip is a delicious and easy-to-make appetizer that captures the classic flavors of a Reuben sandwich in a creamy, cheesy dip perfect for parties and gatherings. Combining cream cheese, corned beef, sauerkraut, Swiss cheese, and tangy Thousand Island dressing, this baked dip offers a warm, savory, and indulgent snack that pairs beautifully with rye crackers, bread, or vegetables.

Ingredients

Dip Ingredients

  • 8 oz cream cheese, softened
  • 1/2 lb corned beef, chopped or shredded
  • 1 cup sauerkraut, squeezed to remove excess liquid
  • 1 cup shredded Swiss cheese
  • 1/2 cup Thousand Island dressing
  • Salt, to taste (optional)

Topping

  • 1/3 cup shredded Swiss cheese

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and lightly grease a baking dish that will comfortably hold all the dip ingredients to prevent sticking.
  2. Combine Ingredients: In a mixing bowl, thoroughly combine the softened cream cheese, chopped corned beef, squeezed sauerkraut, shredded Swiss cheese, and Thousand Island dressing. Season with salt if desired, and mix well to blend all flavors evenly.
  3. Transfer and Top: Spread the combined mixture evenly into the prepared baking dish. Sprinkle the reserved 1/3 cup shredded Swiss cheese evenly over the top to create a cheesy crust when baked.
  4. Bake the Dip: Place the baking dish in the preheated oven and bake for 20 to 25 minutes until the dip is hot throughout and the cheese topping is melted and slightly golden.

Notes

  • Make sure to squeeze the sauerkraut well to avoid a watery dip.
  • Serve warm for the best flavor and texture.
  • Great served with rye crackers, toasted baguette slices, or fresh vegetables for dipping.
  • Can be prepared ahead of time and baked just before serving.
