Description

These Refried Bean Burritos are a quick and delicious meal perfect for any day of the week. Featuring a creamy blend of refried pinto beans and optional pumpkin puree with taco seasoning and salsa, these burritos can be served immediately or baked to achieve a crispy golden crust. Customize with rice and cheddar cheese for extra heartiness, wrapped in warm, soft tortillas for a satisfying and flavorful dish.

Ingredients

Burrito Filling

  • 1 (16-ounce) can refried pinto beans
  • 1 cup 100% pumpkin puree (optional)
  • 1 tablespoon taco seasoning
  • ½ cup salsa
  • 2 cups cooked rice (optional)
  • 1 cup shredded cheddar cheese (optional)

Assembly

  • 8 large (8-10 inch) tortillas

Instructions

  1. Prepare the Bean Mixture: In a large heat-safe mixing bowl, combine the refried pinto beans with pumpkin puree (if using), salsa, and taco seasoning. Mix thoroughly until the ingredients are smooth and well incorporated. If desired, fold in the cooked rice, ensuring it’s evenly blended with the bean mixture. For immediate serving without baking, cover the bowl with a damp paper towel and microwave the filling in 60-second intervals until heated evenly throughout.
  2. Warm the Tortillas: Heat the tortillas until warm and pliable to make rolling easier. You can wrap them in a damp paper towel and microwave for 30-40 seconds or heat each one individually in a dry skillet over medium heat for about 30 seconds per side.
  3. Assemble the Burritos: Scoop about ½ cup of the bean mixture onto the center of each tortilla. Spread it down the middle, then sprinkle 2-3 tablespoons of shredded cheddar cheese over the top if using.
  4. Roll the Burritos: Fold in the sides of the tortilla, then fold the bottom up and over the filling, rolling tightly to enclose the ingredients completely.
  5. Cook for Crispy Burritos (Optional): For a crispy exterior, place the wrapped burritos seam side down on a baking sheet and bake in a preheated 400℉ (200℃) oven for 10-12 minutes until golden and heated through. Alternatively, toast the burritos in a lightly greased nonstick skillet over medium-high heat until golden on all sides.
  6. Serve: Serve the burritos warm, either straight from the microwave for a soft texture or after baking/toasting for a crispier finish.

Notes

  • Pumpkin puree is optional but adds a subtle sweetness and boosts nutrition.
  • Rice adds bulk and texture but can be omitted for a lower-carb option.
  • Cheese is optional; use shredded cheddar or any preferred melting cheese.
  • To reheat leftovers, microwave wrapped in a damp paper towel or re-toast in a skillet for crispiness.
  • For vegan or vegetarian diets, ensure taco seasoning and salsa are compliant and omit cheese or use vegan alternatives.
