Description

This Quick Pickled Green Beans recipe offers a tangy and spicy way to enjoy crisp green beans with a flavorful brine made from vinegar, garlic, mustard seeds, and dill. Perfect as a snack, garnish for salads, or addition to a cheese platter, these pickled green beans develop their full flavor after a few days in the fridge but can be enjoyed as early as 24 hours after preparation.

Ingredients

Pickling Ingredients

  • 1.5 lb green beans, trimmed
  • 3 small dried hot red peppers
  • Two large bunches of fresh dill
  • 3 cloves garlic
  • 2 teaspoons (18 mL) mustard seeds
  • 1 cup water
  • 2 cups white vinegar
  • 1 tablespoon pickling salt

Instructions

  1. Prepare the Green Beans: Cut the green beans into equal lengths that will fit inside your jars, discarding the stem ends to ensure a clean fit.
  2. Layer Ingredients in Jars: Into each jar, place one head of dill, the garlic cloves, mustard seeds, and hot red peppers. Then tightly pack the cut green beans vertically, cut side up. Finish by topping with another bunch of dill to infuse the flavor throughout.
  3. Make the Brine: In a medium-sized saucepan, combine the water, white vinegar, and pickling salt. Bring the mixture to a boil, then reduce heat and simmer for 3 minutes to fully dissolve the salt and meld flavors.
  4. Pour Brine over Beans: Carefully pour the hot brine into each jar, ensuring you leave about ½-inch (1 cm) of headspace at the top for expansion during pickling.
  5. Seal and Cool: Seal the jars with lids and let them cool to room temperature on the counter. This step prevents condensation and maintains jar integrity.
  6. Refrigerate and Wait: Once cooled, place the jars in the refrigerator. Allow the beans to pickle for at least 2-3 days to develop a stronger briny flavor, though they can be eaten as soon as 24 hours after preparation.
  7. Serve: Enjoy your pickled green beans as a tasty snack, paired with Caesar salads, or included on a pickle and cheese platter alongside some fresh bread.

Notes

  • For spicier pickled beans, increase the number of dried hot red peppers.
  • Use sterilized jars for longer shelf-life and food safety.
  • These pickled beans can be stored in the refrigerator for up to 2 weeks.
  • You can adjust vinegar levels to make the brine more or less tangy according to your taste.
  • Make sure the beans are fully submerged in the brine to avoid spoilage.
