Ingredients
Hummus Base
- 2 (14 ounce) cans chickpeas, drained, rinsed, and patted dry
- ½ cup tahini
- ½ cup pumpkin puree
- 1 chipotle pepper
- 2 tablespoons adobo sauce from the can of chipotles
- 2 garlic cloves
- 1 tablespoon maple syrup
- 2 tablespoons freshly squeezed lemon juice
- ½ teaspoon smoked paprika
- Kosher salt and pepper, to taste
- ¼ to ⅓ cup ice water
For Serving
- Pita chips, crackers, etc.
- Roasted, salted pepitas
- Olive oil, for drizzling
- Extra chickpeas (optional)
- Maple chipotle sauce (1 tablespoon maple syrup + 2 teaspoons chipotle adobo sauce, whisked together)
Instructions
- Blend Chickpeas and Tahini: Place the drained and rinsed chickpeas in a blender or food processor. Pulse and blend until they start to break down. Add the tahini and blend to combine into a coarse base.
- Add Flavor Ingredients: Add the pumpkin puree, chipotle pepper, adobo sauce, garlic cloves, maple syrup, lemon juice, smoked paprika, and a large pinch of kosher salt and pepper. Puree until the mixture is very smooth, scraping down the sides as needed. This pureeing step typically takes 2 to 4 minutes for optimal creaminess.
- Adjust Consistency: While the processor is running, slowly stream in the ice water until the hummus reaches your desired creamy consistency. Stop occasionally to taste and adjust seasoning with more salt and pepper if needed.
- Plate and Garnish: Spoon the pumpkin chipotle hummus into a serving bowl. Drizzle olive oil on top, scatter extra chickpeas if desired, and sprinkle generously with roasted salted pepitas. Add a drizzle of the prepared maple chipotle sauce for an extra touch of flavor and sweetness.
- Serve and Store: Serve immediately with pita chips or crackers. Store any leftovers sealed in the refrigerator, where it will keep well for several days.
Notes
- Adjust the amount of chipotle pepper and adobo sauce based on desired spiciness.
- Ice water helps achieve a smooth, silky texture in the hummus; add gradually to avoid making it too thin.
- This hummus pairs wonderfully with crunchy vegetables as well as pita chips or crusty bread.
- Store leftovers in an airtight container in the fridge for up to 4 days.
- To make it vegan-friendly, ensure the maple syrup is pure and free of any animal-derived additives.
