Description

This Pineapple Chipotle Salsa is a vibrant, smoky, and slightly sweet salsa perfect for adding a flavorful kick to your meals. Charred tomatillos, pineapple, and whole garlic cloves are broiled to perfection, then blended with spicy chipotle peppers in adobo sauce. Ready in just 20 minutes, this salsa pairs wonderfully with grilled meats, tacos, or as a zesty dip.

Ingredients

Produce

  • 7-8 tomatillos, husks removed and sliced in half
  • 4 garlic cloves, kept whole
  • 2 thick slices of onion (about 1/2-inch thick each)
  • 2 slices of fresh pineapple, cored (or 2 rings of canned pineapple, patted dry)

Condiments & Spices

  • 1 or 2 chipotle peppers in adobo
  • 1 teaspoon kosher salt (optional, plus more to taste)

Instructions

  1. Preheat and prepare for broiling: Preheat your oven to the high broiler setting and place an oven rack on the top rung. Line a baking sheet with foil for easier cleanup.
  2. First broil: Arrange the tomatillos, whole garlic cloves, onion slices, and pineapple on the prepared baking sheet. Broil on high for 10 minutes, allowing them to char and soften.
  3. Flip and second broil: Carefully remove the baking sheet from the oven, flip all the ingredients over, and return it to the oven. Broil for an additional 5 minutes, or until the ingredients are gently charred. Watch closely to avoid burning as broiler heat can vary greatly.
  4. Blend the ingredients: Transfer the charred ingredients to a high-speed blender or a food processor. Add the chipotle peppers in adobo. Blend briefly or pulse a few times until you achieve a chunky salsa consistency.
  5. Season and serve: Taste the salsa and add kosher salt as needed. Stir to combine thoroughly. Serve immediately with your favorite dishes.

Notes

  • Keep a close eye during the second broil as the ingredients can burn quickly.
  • You can adjust the number of chipotle peppers based on your preferred spice level.
  • Use fresh pineapple for best texture and flavor, but canned pineapple rings work well too if dried before broiling.
  • This salsa is perfect for tacos, grilled meats, or as a flavorful dip with chips.
  • Store any leftovers in an airtight container in the refrigerator for up to 3 days.
