Description

This quick and flavorful Peanut Sauce Stir Fry with Shrimp is a vibrant and healthy meal combining succulent shrimp, fresh vegetables, and brown rice noodles all tossed in a creamy, tangy peanut sauce. Ready in just 25 minutes, it’s perfect for a nutritious weeknight dinner that balances protein, veggies, and a savory-sweet sauce with Asian-inspired flair.

Ingredients

Shrimp and Noodles

  • 1 lb raw shrimp (peeled & de-veined)
  • 1 package brown rice noodles (pre-cooked)

Vegetables

  • 1/2 onion (thinly sliced)
  • Desired vegetables such as broccoli (cut into small florets), sliced mushrooms, sliced bell pepper

Peanut Sauce

  • 3 tablespoons peanut butter
  • 3 tablespoons soy sauce
  • 3 tablespoons rice vinegar
  • 1 tablespoon honey
  • 2 teaspoons minced or grated ginger

Other

  • Sesame oil (or canola oil) for cooking
  • Peanuts (optional, for garnish)

Instructions

  1. Prepare the Peanut Sauce: Combine peanut butter, soy sauce, rice vinegar, honey, and ginger in a small bowl or jar. If the peanut butter is thick, microwave it for about 30 seconds until it becomes drizzly. Whisk the ingredients together until the sauce is smooth and well blended.
  2. Cook the Shrimp: Heat a drizzle of sesame or canola oil in a large skillet or wok over medium-high heat. Add the peeled and deveined shrimp and cook for 3-4 minutes, stirring occasionally, until the shrimp turn opaque and are no longer translucent. Remove the shrimp from the pan and set aside.
  3. Cook the Vegetables: Add more oil to the same pan and add the sliced onion and your chosen vegetables like broccoli florets, mushrooms, and bell peppers. Stir occasionally and cook for 5-7 minutes until the vegetables are just tender but still crisp.
  4. Combine and Finish: Reduce the heat to medium. Return the cooked shrimp to the pan along with the pre-cooked brown rice noodles. Pour the prepared peanut sauce over everything and stir well to combine thoroughly. Cook for another 1-2 minutes so the sauce heats through and coats the shrimp, noodles, and vegetables evenly.
  5. Serve and Garnish: If desired, sprinkle chopped peanuts on top before serving to add a crunchy texture and extra peanut flavor. Serve the stir fry hot and enjoy this delicious, balanced meal.

Notes

  • Pre-cooking the brown rice noodles helps save time; if using dry noodles, cook according to package instructions before the recipe.
  • You can customize the vegetables to your liking or season availability; snap peas, carrots, or baby corn work well too.
  • For a gluten-free version, use tamari or a gluten-free soy sauce.
  • If you prefer a spicier dish, add a dash of chili flakes or sriracha to the peanut sauce.
  • Microwaving peanut butter thins it out and makes mixing easier, especially if it’s natural or thick peanut butter.
