Description
This Peanut Butter & Jelly Banana Bread is a delicious twist on a classic favorite, combining the rich creaminess of peanut butter with the sweet burst of jelly swirls baked into moist banana bread. Perfect for breakfast or a satisfying snack, this recipe creates a beautifully marbled loaf that is both comforting and flavorful.
Ingredients
For the Bread:
- 3 ripe bananas, mashed
- 1/3 cup creamy peanut butter
- 1/2 cup sugar
- 1/4 cup melted butter
- 1 teaspoon vanilla extract
- 1 large egg
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
For the Jelly Swirl:
- 1/4 cup jelly or jam (grape, strawberry, or your favorite flavor)
Instructions
- Prepare the Batter: Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan. In a large mixing bowl, mash the ripe bananas until smooth. Stir in the creamy peanut butter, sugar, melted butter, vanilla extract, and egg until well combined. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing gently until just combined to maintain a tender crumb.
- Layer the Batter and Jelly: Pour half of the banana bread batter into the prepared loaf pan and spread it evenly. Spoon dollops of jelly over the batter in several spots. Using the tip of a butter knife or toothpick, gently swirl the jelly through the batter to create distinct streaks without fully blending, creating a beautiful marbled effect.
- Add the Second Layer: Pour the remaining banana bread batter over the jelly layer and smooth it with a spatula. Repeat the process of dolloping jelly on top and gently swirling it with a knife or toothpick to add more marbled jelly patterns on top of the loaf.
- Bake the Bread: Place the loaf pan in the preheated oven and bake for 50 to 60 minutes. The bread is done when a toothpick inserted into the center comes out clean. Let the bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely, allowing it to set perfectly for slicing.
Notes
- You can substitute the jelly with any flavor you prefer such as raspberry or apricot for different flavor profiles.
- If bananas are not ripe enough, place them in a paper bag for a couple of days to ripen faster.
- For a nuttier texture, consider adding chopped peanuts or walnuts to the batter.
- Use room temperature ingredients to ensure even mixing and a smooth batter.
- Allow the bread to cool completely before slicing to avoid crumbling.
