Ingredients
Roasted Carrots
- 1 lb carrots, peeled and sliced ½ inch thick
- 1 tbsp smoked paprika
- Olive oil, for drizzling
- Kosher salt, to taste
Hummus
- ¼ cup ice cold water, plus more if needed
- 1 (15.5 oz) can chickpeas (no salt added), rinsed and drained
- 2 garlic cloves, roughly chopped
- ½ cup tahini
- 2 tbsp olive oil
- 2 tsp lemon zest
- 2 tbsp lemon juice
- 1 ¼ tsp kosher salt
Toppings & Serving
- 1 tbsp sesame seeds
- 1 tbsp fresh dill leaves
- 1 tbsp chopped fresh chives
- Flaky sea salt, for garnish
- Warm pita or pita chips, for serving
Instructions
- Roast the carrots: Preheat your oven to 425°F. Line a sheet pan with parchment paper. Arrange the sliced carrots on the pan, then sprinkle with smoked paprika, a generous drizzle of olive oil, and a pinch of kosher salt. Toss everything well to coat the carrots evenly. Spread them out in a single layer and roast for 30-35 minutes until they become tender and slightly caramelized. Remove from the oven and let them cool for about 10 minutes.
- Prepare the hummus: In a high-powered blender or food processor, combine the ice cold water, roasted carrots, chickpeas, chopped garlic, tahini, olive oil, lemon zest, lemon juice, and kosher salt. Blend until the mixture is smooth and creamy, occasionally scraping down the sides with a spatula to ensure all ingredients are well incorporated. If the hummus is too thick or not blending smoothly, add extra water a tablespoon at a time to reach your desired consistency. Taste and adjust seasoning with more salt if necessary.
- Plate and garnish: Transfer the hummus to a serving bowl. Sprinkle the top with sesame seeds, fresh dill leaves, chopped chives, and a pinch of flaky sea salt. Finish with a drizzle of olive oil for added richness.
- Serve: Present the hummus alongside warm pita bread or pita chips for dipping. Enjoy this vibrant smoky carrot hummus as a flavorful appetizer, snack, or spread.
Notes
- Use fresh herbs at their peak for the best flavor in the garnish.
- Smoked paprika adds a rich, smoky depth; feel free to adjust the quantity according to your spice preference.
- If you prefer a thinner hummus, gradually add more cold water while blending.
- Roasting the carrots caramelizes their natural sugars, enhancing the hummus’ sweetness and complexity.
- Store leftovers in an airtight container in the refrigerator for up to 4 days.
