Description

This Orange Baked Chicken is a flavorful and crispy chicken dish coated in a tangy orange sauce, served with steamed broccoli and fluffy rice. The chicken is breaded and baked to perfection, then tossed in a sweet and savory homemade orange sauce, making it a perfect copycat recipe for a delicious and healthy meal that's easy to prepare at home.

Ingredients

Chicken and Coating

  • Cooking spray
  • 1.5 cups panko breadcrumbs
  • 1 cup all-purpose flour (or gluten-free all-purpose flour)
  • 1/2 tsp salt
  • 2 eggs, whisked
  • 16 oz chicken thighs, chopped (can substitute chicken breast)

Rice

  • 3/4 cup rice
  • 1.5 cups water
  • Generous pinch of salt

Broccoli

  • 1 tbsp olive oil
  • 1 head broccoli, chopped into florets
  • Salt and pepper to taste
  • 1/4 cup water

Orange Sauce

  • 1 tsp cornstarch
  • 1/4 cup rice vinegar
  • 1/4 cup soy sauce
  • 1 tsp sesame oil
  • 1 inch ginger, minced or grated
  • 1 clove garlic, minced or grated
  • 2 tbsp ketchup
  • 1/3 cup water
  • 1/4 cup white sugar (plus more to taste)
  • Juice and zest from 1 orange (about 1/2 cup juice and 1/2 tsp zest)

Instructions

  1. Preheat and Prepare Baking Sheet: Preheat your oven to 375°F (190°C) and grease a baking sheet with cooking spray to prevent the chicken from sticking.
  2. Prepare the Chicken Coating: Process the panko breadcrumbs in a food processor to make them finer. In separate bowls, mix the all-purpose flour with salt, place the processed panko, and whisk the eggs. Dip each piece of chicken first into the flour mixture, then the whisked eggs, and finally coat with the panko breadcrumbs, shaking off excess at each step. Arrange the coated chicken pieces spaced evenly on the prepared baking sheet.
  3. Bake the Chicken: Place the baking sheet in the oven and bake the chicken for 20 minutes until golden and cooked through.
  4. Cook the Rice: While the chicken bakes, add rice, water, and a generous pinch of salt to a pot. Bring to a boil, then cover and reduce to a simmer for 10 minutes. Turn off the heat and let the rice steam, covered, for an additional 10 minutes without lifting the lid. Fluff with a fork and set aside.
  5. Steam and Cook Broccoli: Heat olive oil in a skillet over medium heat. Add broccoli florets and season with salt and pepper. Toss to coat in oil, then add 1/4 cup water and cover to steam until bright green, about 6-8 minutes. Remove lid and cook uncovered for another 2-3 minutes to evaporate excess water. Remove broccoli and wipe skillet clean.
  6. Prepare Orange Sauce Mixture: In a measuring cup, combine cornstarch, rice vinegar, soy sauce, white sugar, sesame oil, minced ginger, minced garlic, ketchup, water, orange juice, and orange zest. Stir well to combine.
  7. Cook the Sauce: Pour the sauce mixture into the same skillet over medium-high heat. Bring it to a low boil, stirring frequently. Continue cooking for 3-5 minutes until the sauce thickens, adjusting sweetness with additional sugar or ketchup if desired. If the sauce is not thickening, increase the heat slightly and stir less frequently.
  8. Toss Chicken in Sauce: Add the baked chicken pieces to the sauce in the skillet and toss gently to coat each piece evenly.
  9. Assemble the Meal: Portion cooked rice, steamed broccoli, and the orange-coated chicken into meal prep containers or plates. Serve immediately and enjoy your homemade Orange Baked Chicken meal.

Notes

  • For a gluten-free version, substitute all-purpose flour with a gluten-free alternative and ensure panko breadcrumbs are gluten-free.
  • Chicken breasts can be used instead of thighs for a leaner option, but cooking time might slightly vary.
  • Be careful not to lift the lid while the rice is steaming to ensure optimal texture.
  • Adjust the sauce sweetness to your taste by adding more sugar or ketchup.
  • If the sauce thickens too much, add a splash of water to thin it out before tossing the chicken.
  • Use tongs to coat the chicken efficiently and avoid clumping the breading.
