Ingredients
Dates and Base
- 8 Medjool dates, pitted (or Deglet Noor if Medjool are unavailable)
- 2 teaspoons water
- Pinch of salt
Coconut
- 1 cup unsweetened coconut flakes, toasted
Chocolate Coating
- 3/4 cup dairy free chocolate chips
Instructions
- Soften Dates: If your dates are dry, soak them in warm water for a few minutes to soften, making them easier to process.
- Prepare Date Mixture: Place the pitted Medjool dates in a food processor along with a pinch of salt and 2 teaspoons of water. Process until a smooth paste forms, occasionally scraping down the sides and adding a bit more water if needed to achieve a smooth consistency.
- Mix in Toasted Coconut: Stir the toasted coconut flakes into the smooth date mixture evenly using a spoon.
- Shape Cookies: Roll the mixture into small balls, then flatten each ball with your hand to form cookie shapes. Place them on a cookie sheet lined with waxed paper. Use a straw to poke a hole through the center of each cookie to mimic the classic Samoa design.
- Freeze Cookies: Put the cookie sheet with the formed cookies into the freezer for about one hour to firm up.
- Melt Chocolate: Melt the dairy free chocolate chips either in the microwave in short bursts or over a double boiler on the stove until smooth.
- Coat Cookies: Dip the bottom of each chilled cookie into the melted chocolate, then place them back on the waxed paper-lined cookie sheet.
- Decorate with Chocolate Drizzle: Drizzle the remaining melted chocolate over the tops of the cookies using a spoon or by piping it from a ziplock bag with the tip cut off for a neat finish.
- Chill to Set Chocolate: Place the tray in the refrigerator until the chocolate hardens. Store leftover cookies in the refrigerator to keep them fresh.
Notes
- To toast coconut flakes, spread them evenly on a baking sheet and bake at 350°F (175°C) for about 5-8 minutes, stirring occasionally, until golden and fragrant.
- If dates are very dry, soaking them in warm water is essential to achieve a smooth paste.
- Using a straw to poke a hole in the cookies gives them a traditional look and helps with even freezing and handling.
- Store cookies refrigerated and consume within 5-7 days for optimal freshness.
