Description

Delicious and easy No-Bake Peanut Butter Cup Bars combining creamy peanut butter, almond flour, and a rich chocolate topping. Perfect for a quick treat that requires no oven time and can be enjoyed chilled or frozen.

Ingredients

Peanut Butter Base

  • 3/4 cup creamy salted peanut butter (preferably natural, with just peanuts and salt)
  • 1/2 cup almond flour
  • 2 Tbsp maple syrup
  • 1/4 tsp sea salt (optional, include if using unsalted peanut butter or for extra saltiness)

Chocolate Topping

  • 1/2 cup semi-sweet chocolate chips or chunks
  • 2 Tbsp creamy salted peanut butter
  • 1/2 tsp coconut oil
  • Flaky sea salt (optional, for topping)

Instructions

  1. Prepare the Pan: Line a standard-size loaf pan with parchment paper and set aside, ensuring easy removal of the bars later.
  2. Make the Peanut Butter Base: In a medium microwavable mixing bowl, combine the 3/4 cup peanut butter, almond flour, maple syrup, and optional sea salt. Stir thoroughly with a spatula or spoon until all ingredients are well blended. Transfer the mixture evenly into the lined loaf pan and set aside.
  3. Melt the Chocolate: Place the chocolate chips into the now-empty microwavable bowl. Microwave in 30-second intervals, stirring between each to avoid burning, until the chocolate is smooth and fully melted. Alternatively, melt the chocolate over a double boiler on the stovetop by placing chocolate in a small bowl over simmering water and stirring until smooth.
  4. Prepare the Chocolate Topping: To the melted chocolate, add 2 tablespoons of peanut butter and 1/2 teaspoon coconut oil. Stir together until you achieve a smooth, uniform mixture. Pour this chocolate layer evenly over the peanut butter base in the loaf pan. Optionally, sprinkle flaky sea salt over the top for added texture and flavor. Place the pan in the freezer for about 20 minutes to allow the chocolate to set firmly.
  5. Slice and Serve: Once the chocolate topping is set, remove the bars from the loaf pan by lifting the parchment paper sides. Slice into approximately 14 bars as recommended due to their richness. Serve and enjoy immediately or chill before serving for a firmer texture.
  6. Storage: Store any leftover bars in an airtight container in the refrigerator for up to 1-2 weeks, or freeze for up to 1 month to maintain freshness.

Notes

  • Use natural peanut butter with minimal ingredients for best texture and flavor.
  • Adjust the amount of peanut butter in the chocolate topping if you alter the batch size.
  • Microwaving chocolate in intervals and stirring helps prevent burning.
  • Almond flour can be substituted with another nut flour if desired.
  • Flaky sea salt topping adds a nice contrast but is optional.
  • Bars are rich; smaller slices are recommended.
