- 5 ounces vegetable oil
- 14 ounces buttermilk (room temperature or slightly warm)

- 1/2 teaspoon almond extract
- 1 ounce cocoa powder (Dutch or natural)
- 3 ounces hot water
Ganache Frosting
- 16 ounces semi-sweet chocolate
- 16 ounces heavy whipping cream
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
Ganache Drip
- 6 ounces semi-sweet chocolate
- 4 ounces heavy whipping cream
Decoration
- 1 tablespoon cocoa powder (for dusting)
Instructions
- Prepare Pans and Oven: Grease and flour three 8"x2" cake pans or spray with preferred pan spray. Preheat oven to 335ºF (168ºC).
- Bring Ingredients to Room Temperature: Ensure butter, buttermilk, and eggs are at room temperature to create a smooth emulsion for the batter.
- Make Cocoa Mixture: Heat water until simmering, then stir in 1 ounce cocoa powder until moistened; it may look lumpy. Set aside to cool.
- Mix Milk and Oil: In a separate container, combine 3/4 cup of the buttermilk with vegetable oil and set aside.
- Mix Eggs and Remaining Milk: In another container, whisk together remaining buttermilk, eggs, vanilla, and almond extract until eggs are broken up; set aside.
- Mix Dry Ingredients: Using a stand mixer fitted with paddle attachment, combine flour, sugar, baking powder, baking soda, and salt. Mix briefly (about 10 seconds) to blend.
- Add Butter (Reverse Creaming Method): Add softened butter and mix on low until mixture resembles coarse sand (about 30 seconds); this ensures a velvety, moist texture.
- Add Milk/Oil Mixture: Add the milk and oil mixture to dry ingredients and mix on low until moistened.
- Develop Cake Structure: Increase mixer speed to medium and beat for 2 minutes to build structure and avoid cake collapse.
- Incorporate Egg Mixture: Scrape bowl, reduce speed to low, then add egg mixture in three additions, mixing 15 seconds between each addition. Scrape bowl to combine thoroughly.
- Divide Batter for Marbling: Remove one-third of batter and fold into cooled cocoa mixture gently until combined.
- Layer and Marble Batter: Pour batter into pans alternating with vanilla batter, starting and ending with vanilla. Use a butter knife to swirl gently without over-mixing to create a marbled effect.
- Bake Cake: Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean and the cake hasn’t shrunk from the sides. Immediately tap the pans firmly on counter once to release steam and prevent shrinking.
- Cool Cake: Let cakes cool in pans for 10 minutes, then invert onto cooling racks until completely cool. Optionally chill or freeze wrapped to retain moisture before frosting.
- Prepare Ganache Frosting: Place 16 ounces semi-sweet chocolate in a heatproof bowl. Heat 16 ounces heavy cream to a simmer (do not boil) and pour over chocolate. Let sit 5 minutes, add vanilla and salt, then whisk until smooth. Cool ganache to peanut butter consistency (about 20 minutes).
- Frost Cake: Spread ganache on cooled cake layers, then refrigerate for 20 minutes to set. Optionally use buttercream or Swiss meringue buttercream instead.
- Dust Cake: Lightly dust ganached cake with cocoa powder using a soft makeup brush for a velvet appearance.
- Prepare Ganache Drip: Heat 4 ounces heavy cream until steaming but not boiling. Pour over 6 ounces semi-sweet chocolate and let sit 5 minutes. Whisk smooth.
- Apply Ganache Drip: Let drip mixture cool until slightly warm, then pipe drip onto chilled frosted cake for a decorative finishing touch.
Notes
- Use the reverse creaming method by mixing butter with dry ingredients first to achieve a moist and velvety crumb.
- All ingredients should be at room temperature to ensure proper emulsification and texture.
- Do not over-swirl the marbled batter layers to maintain distinct chocolate and vanilla patterns.
- Immediate firm tapping of pans after removing from oven prevents shrinking by releasing steam.
- Ganache must not boil during heating to prevent graininess; gentle simmer is key.
- Chilling cakes before frosting helps maintain shape and reduces crumbling during decoration.
- Use a soft makeup brush to evenly dust cocoa for a professional velvet finish.
- The ganache drip looks best when applied to a well-chilled cake to control flow and texture.
