Description

A hearty and flavorful Chicken Taco Casserole that combines seasoned chicken, rice, vegetables, and black beans baked together with Mexican cheese for a comforting and easy-to-make meal. Perfect for a family dinner, this dish is topped with fresh garnishes like Greek yogurt, lettuce, avocado, and crunchy tortilla strips for added texture and taste.

Ingredients

Chicken and Seasoning

  • 1 pound boneless chicken tenders or strips
  • 1/4 cup taco seasoning
  • 2 tablespoons olive oil
  • 2 tablespoons salted butter

Main Ingredients

  • 1 cup dry rice
  • 1 yellow onion, chopped
  • 2 poblano peppers, chopped
  • 1 cup fresh or frozen corn
  • 1 can (10 ounces) Rotel tomatoes
  • 1 cup black beans
  • 1 1/2 cups shredded Mexican cheese

Toppings and Garnishes

  • Plain Greek yogurt
  • Shredded lettuce, green onion, and cilantro
  • Cubed or sliced avocado
  • Tortilla strips

Instructions

  1. Preheat and Prepare Chicken: Preheat the oven to 450°F. In a 9x13 inch baking dish, toss the chicken tenders with taco seasoning, olive oil, and salted butter until evenly coated.
  2. Bake Chicken: Bake the seasoned chicken uncovered for 15 minutes, or until fully cooked through.
  3. Shred the Chicken: Remove the dish from oven and reduce the temperature to 400°F. Shred the baked chicken directly in the casserole dish using two forks.
  4. Add Remaining Ingredients: Add the dry rice, chopped onions, poblano peppers, corn, Rotel tomatoes (with juices), and black beans to the casserole dish. Pour 1 1/2 cups of water over the mixture and stir everything together to combine evenly.
  5. Top with Cheese and Bake Covered: Sprinkle shredded Mexican cheese evenly over the top. Cover the dish with a lid or foil, then bake for 25 minutes at 400°F.
  6. Bake Uncovered: Remove the cover and bake for an additional 10 minutes to allow the cheese to brown slightly and moisture to reduce.
  7. Check Rice and Adjust: If the rice is still hard, add about 1/3 cup more water, cover, and bake for another 10 minutes until the rice is tender.
  8. Serve and Garnish: Serve the casserole hot, topped with plain Greek yogurt, shredded lettuce, green onions, cilantro, avocado, and crunchy tortilla strips as desired.

Notes

  • Use chicken tenders for quick cooking, but chicken breasts can be substituted.
  • You can substitute poblano peppers with bell peppers if you prefer a milder flavor.
  • If fresh corn is unavailable, frozen corn works perfectly well.
  • Rotel tomatoes add a nice mild spice and tomato flavor; you can substitute with diced tomatoes plus green chilies if needed.
  • Covering the casserole helps cook the rice evenly; removing the lid toward the end aids in browning and moisture reduction.
  • Adding extra water during baking ensures the rice is fully cooked and moist.
  • Garnishes add freshness and texture but can be omitted or customized based on preference.
