These Mini Grilled Cheese sandwiches are the perfect bite-sized comfort food, featuring sharp Cheddar cheese melted between buttery Hawaiian sweet rolls flavored with garlic herb butter. Baked until golden and crispy, they make a delightful appetizer or snack, especially when paired with tomato soup.
Ingredients
Bread and Cheese
- 1 package (12-count) Hawaiian sweet dinner rolls
- 12 slices sharp Cheddar cheese
Herb Butter
- 8 tablespoons unsalted butter, softened
- 2 teaspoons Italian seasoning
- 1 teaspoon garlic powder
- 1 tablespoon finely chopped fresh parsley
- Salt and pepper, to taste
Instructions
- Prepare Rolls: Preheat your oven to 350°F (175°C). Separate each roll and slice each horizontally into thirds, creating three layers per roll.
- Make Herb Butter: In a small bowl, combine the softened butter with Italian seasoning, garlic powder, chopped parsley, and a pinch of salt and pepper. Mix until well combined.
- Butter the Rolls: Spread the garlic herb butter evenly on both cut sides of each roll piece, using all the butter to coat them thoroughly.
- Assemble Sandwiches: Cut the cheddar slices into squares to fit the rolls. On a baking sheet, place half of the buttered roll pieces butter-side up. Add two pieces of cheddar cheese on each, then top with the remaining buttered roll pieces, butter-side down, to form sandwiches.
- Bake Initial Side: Place the baking sheet in the preheated oven and bake the sandwiches for 5-7 minutes until the bottoms begin to crisp and turn golden.
- Flip and Press: Remove the baking sheet, carefully flip each sandwich over, and gently press down with the back of a metal spatula to help them brown evenly and melt the cheese.
- Bake Other Side: Return the sandwiches to the oven and bake for another 5-7 minutes until the tops are golden and crispy and the cheese is melted inside.
- Serve: Remove from the oven and enjoy warm. These mini grilled cheeses are perfect dipped in tomato soup or served on their own as a delicious snack or appetizer.
Notes
- For best results, use softened butter to ensure easy mixing and spreading.
- Feel free to substitute Cheddar with other melty cheeses like Monterey Jack or Gruyère for variation.
- Fresh parsley adds a bright herbal note; dried parsley can be used but slightly reduce the quantity.
- The baking time may vary depending on your oven; watch for golden, crispy bread and melted cheese as indicators.
- These can be made ahead and reheated in the oven to retain their crispiness.
