Perfect as a nutritious and hearty vegetarian meal, it balances creamy, crunchy, and tangy elements for a delightful eating experience.

Ingredients

Sweet Potatoes

  • 3 medium-sized sweet potatoes
  • 3 tbsp butter
  • salt and pepper, to taste
  • pinch truffle salt (optional)
  • 1 tbsp fresh dill

Roasted Chickpeas

  • 1 can chickpeas
  • extra virgin olive oil or olive oil spray
  • 1 tsp paprika
  • 1 tsp dill seasoning

Toppings (Optional)

  • 1/2 cup tzatziki sauce
  • 1/2 cup diced cucumber
  • 1/2 cup feta cheese crumbles
  • 1 tbsp spicy honey
  • 1 avocado, sliced

Instructions

  1. Prepare Chickpeas: Drain and rinse a can of chickpeas under warm water, then soak them in a bowl for 20-30 minutes.
  2. Preheat Oven: Preheat your oven to 400°F and line a baking sheet with parchment paper.
  3. Remove Chickpea Skins: Pinch off the skins of each chickpea by holding them between your thumb and index finger to achieve a smoother texture.
  4. Season Chickpeas: Place the skinned chickpeas on the baking sheet, coat with olive oil or cooking spray, then toss with paprika and dill seasoning.
  5. Roast Chickpeas: Bake for 25 minutes, stirring 2-3 times to ensure even crisping and avoid burning.
  6. Lower Oven Temperature: After roasting, set chickpeas aside and reduce the oven temperature to 350°F.
  7. Prepare Sweet Potatoes: Wash and dry sweet potatoes, peeling off any blemishes with a vegetable peeler.
  8. Boil Sweet Potatoes: Bring water to a boil in a 5-quart Dutch oven and add the sweet potatoes. Boil for 10 minutes on high heat.
  9. Let Sit: Turn off the stove and let sweet potatoes sit in hot water for an additional 5-10 minutes to finish cooking.
  10. Slice and Add Butter: Remove sweet potatoes from water and cut slits about 2/3 through each potato. Insert a tablespoon of butter into each slit.
  11. Bake Sweet Potatoes: Place sweet potatoes on a baking sheet and bake at 350°F for 25-35 minutes until caramelized and soft inside, testing doneness with a fork or knife.
  12. Assemble: Fill each baked sweet potato with the roasted chickpeas.
  13. Garnish: Top potatoes with your choice of feta cheese, truffle salt, diced cucumber, tzatziki sauce, fresh dill, avocado slices, and a drizzle of spicy honey for added flavor.

Notes

  • Removing the chickpea skins is optional but helps create a crispier texture when roasted.
  • If truffle salt isn’t available, regular sea salt can be used as a substitute.
  • For extra flavor, you can toss the sweet potatoes with additional spices before baking.
  • Toppings can be customized or omitted based on dietary preferences.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven to maintain crispness.
