Description

Delicious Mediterranean Grilled Shrimp Kabobs marinated in a flavorful blend of olive oil, garlic, lemon zest, and aromatic herbs, grilled to perfection for a quick and satisfying seafood dish.

Ingredients

Marinade

  • 1/3 cup Extra virgin olive oil
  • Zest of 2 lemons
  • 4 garlic cloves (minced)
  • ¼ cup packed chopped fresh parsley
  • 1 teaspoon oregano
  • 1 teaspoon paprika
  • ½ teaspoon coriander
  • ½ teaspoon red pepper flakes

Shrimp

  • 2 lb large shrimp (peeled and deveined)
  • Kosher salt, to taste

Additional

  • Splash of lemon juice (for serving)
  • Bamboo skewers (if using, soaked in water for at least 30 minutes)

Instructions

  1. Prepare the Marinade: Combine extra virgin olive oil, lemon zest, minced garlic, chopped fresh parsley, oregano, paprika, coriander, and red pepper flakes in a small bowl. Reserve 2 tablespoons of this marinade in a separate bowl for later use.
  2. Season the Shrimp: Pat the shrimp dry with paper towels and season them with kosher salt. Place the shrimp in a large bowl and pour the remaining marinade over them. Toss to combine ensuring each shrimp is well coated.
  3. Marinate the Shrimp: Cover the bowl with plastic wrap and refrigerate the shrimp for 20 to 30 minutes to absorb the flavors. Avoid marinating for longer to maintain texture.
  4. Skewer the Shrimp: Thread the marinated shrimp onto skewers, placing about four large shrimp per skewer. If using bamboo skewers, make sure they have been soaked in water for at least 30 minutes to prevent burning.
  5. Grill the Shrimp - Outdoor Gas Grill: Preheat your gas grill to high heat, then reduce it to a low setting aiming for a temperature between 275 to 325ºF. Grease the grill grates carefully to prevent sticking. Place the shrimp skewers on the grill and close the lid. Cook the shrimp for 2 to 3 minutes on each side until they are opaque and cooked through.
  6. Grill the Shrimp - Indoor Griddle or Cast Iron Grill: Heat a dry griddle or cast iron grill pan over medium-high heat until hot but not smoking. Add the shrimp skewers to the pan and cook for 3 to 4 minutes on one side. Flip and cook for another 2 to 3 minutes until the shrimp are no longer translucent.
  7. Serve: Transfer the grilled shrimp skewers to a serving platter. Spoon the reserved marinade over the shrimp and add a splash of fresh lemon juice for extra brightness. Serve immediately while hot.

Notes

  • Soak bamboo skewers for at least 30 minutes before grilling to prevent burning.
  • Do not marinate shrimp for longer than 30 minutes to avoid a mushy texture.
  • Adjust red pepper flakes to your preferred spice level.
  • Serve with a side of grilled vegetables or a fresh salad for a complete Mediterranean meal.
  • Use fresh shrimp for best flavor and texture.
