Description

This Maple Dijon Sheet Pan Chicken is a flavorful and easy one-pan meal featuring tender chicken thighs, caramelized Brussels sprouts, and roasted butternut squash, all coated in a tangy-sweet maple Dijon glaze. Perfect for a wholesome weeknight dinner, it requires minimal prep and cleanup while delivering a balanced mix of protein and vegetables.

Ingredients

Marinade and Seasoning

  • 3 tablespoons Dijon mustard
  • 2 tablespoons maple syrup (sugar-free is optional)
  • 2 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1 ½ teaspoons kosher salt
  • ⅛ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried parsley
  • ¼ teaspoon red pepper flakes (optional)

Main Ingredients

  • 1 ½ pounds boneless skinless chicken thighs, cut into cubes
  • 12 ounces Brussels sprouts, trimmed and halved
  • 12 ounces butternut squash, cut into ¾-inch cubes

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 425°F (220°C). Lightly spray a large rimmed baking sheet with oil and optionally line it with foil for easier cleanup.
  2. Make the Maple Dijon Marinade: In a large mixing bowl, whisk together Dijon mustard, maple syrup, olive oil, apple cider vinegar, kosher salt, black pepper, garlic powder, onion powder, dried parsley, and red pepper flakes until thoroughly combined.
  3. Coat Chicken and Vegetables: Add the cubed chicken, halved Brussels sprouts, and cubed butternut squash to the bowl. Toss everything together until all pieces are evenly coated with the marinade.
  4. Arrange on Sheet Pan and Roast: Spread the coated chicken and vegetables into an even layer on the prepared baking sheet. Roast in the preheated oven for 35 to 40 minutes, stirring halfway through to ensure even cooking, until the chicken is cooked through and vegetables are tender.
  5. Broil for Char (Optional): If desired, set the oven to broil and cook for an additional 1 to 2 minutes to add a slight char on top. Watch closely to prevent burning.
  6. Serve: Remove from oven and serve hot. This dish pairs excellently with a fresh salad or grains like wild rice, brown rice, or a brown rice and quinoa blend.

Notes

  • You can substitute chicken thighs with chicken breasts, but adjust cooking time accordingly to avoid dryness.
  • Using sugar-free maple syrup is an option for a lower sugar version without sacrificing flavor.
  • Line the baking sheet with foil for easier cleanup after roasting.
  • Make sure to stir halfway through roasting for even caramelization and cooking.
  • Adjust red pepper flakes for your preferred level of heat or omit if sensitive to spice.
  • For a crispier texture, avoid overcrowding the pan and ensure even spacing of ingredients.
