Ingredients
Cake Batter
- ¾ cup granulated sugar
- Zest of 2 lemons
- ½ cup unsalted butter (1 stick), very soft
- 2 large eggs, room temperature
- ½ cup mascarpone, room temperature
- ¼ cup fresh lemon juice
- 1 teaspoon vanilla extract
- 1½ cups all-purpose flour
- 2 teaspoons baking powder
- ¼ teaspoon fine salt
Limoncello Syrup
- ¼ cup limoncello
- ¼ cup fresh lemon juice
- ¼ cup granulated sugar
Mascarpone Cream
- ¾ cup mascarpone, cold
- ½ cup heavy cream, cold
- ½ cup powdered sugar
- 1 teaspoon lemon zest
- ½ teaspoon vanilla extract
To Decorate
- ½ to ⅔ cup good-quality lemon curd
Instructions
- Prepare the Tin & Oven: Preheat your oven to 340°F. Grease an 8-inch round cake tin and line the base with parchment paper, then lightly flour the sides to prevent sticking.
- Make the Cake Batter: In a large bowl, rub the lemon zest into the granulated sugar until it becomes fragrant and slightly damp. This step releases the lemon oils for extra flavor. Beat in the softened butter until the mixture is pale and fluffy, about 2 to 3 minutes. Add the eggs one at a time, beating well and scraping down the sides after each addition. Next, beat in the mascarpone, lemon juice, and vanilla extract; the batter will appear loose, which is correct. In a separate bowl, whisk the flour, baking powder, and salt together, then gently fold into the batter until smooth, careful not to overmix.
- Bake: Pour the batter into the prepared tin and smooth the surface. Bake for 35 to 40 minutes until the cake is lightly golden and a skewer inserted into the center comes out clean. Allow the cake to cool in the tin for 15 minutes before turning it out onto a cooling rack.
- Make the Limoncello Syrup: Combine limoncello, fresh lemon juice, and sugar in a small saucepan. Heat gently, stirring until the sugar dissolves completely but do not let the mixture boil. While the cake is still warm, brush the syrup generously over the surface, allowing it to soak in gradually. Let the cake cool completely.
- Make the Mascarpone Cream: Place the cold mascarpone in a mixing bowl and beat briefly to loosen it. Add powdered sugar, lemon zest, and vanilla extract, mixing well. Add the cold heavy cream and whip on medium speed until the mixture is thick, smooth, and holds soft peaks. Be careful not to overwhip.
- Assembly: Spread the mascarpone cream evenly over the cooled cake, leaving a small rim around the edges. Spoon the lemon curd over the cream and gently swirl it with the back of a spoon or table knife to create a marbled effect. Chill the cake for 20 to 30 minutes before slicing to ensure clean, neat cuts.

- Do not overmix the batter to keep the cake light and tender.
- The limoncello syrup should be applied while the cake is warm to ensure deep absorption.
- Chilling the assembled cake helps firm up the mascarpone cream for clean slicing.
