Description

Delightfully smooth and tangy lemon truffles made with quality white chocolate and infused with lemon extract. These creamy, bite-sized treats are coated in powdered sugar or colorful sprinkles, perfect for special occasions or a sweet indulgence.

Ingredients

Truffle Base

  • 14 ounces (398g) quality white chocolate, coarsely chopped
  • 1 Tablespoon (14g) unsalted butter, softened to room temperature
  • ¾ cup (180mL) heavy cream
  • 1 teaspoon lemon extract

Coating

  • Powdered sugar or sprinkles, for coating

Instructions

  1. Prepare Chocolate and Butter: Place the coarsely chopped white chocolate in a large heatproof bowl. Add the softened unsalted butter on top of the chocolate but do not stir yet. Set this mixture aside as you move to the next step.
  2. Heat Cream and Add Lemon Extract: Pour the heavy cream into a small saucepan and heat it over medium heat, whisking occasionally. Bring it just to a boil and then remove from heat. Carefully whisk in the lemon extract, being cautious as the mixture may bubble up.
  3. Combine Ingredients: Pour the hot cream mixture over the white chocolate and butter. Gently stir using a wooden spoon in one direction without forceful mixing, until the mixture becomes completely smooth and silky.
  4. Chill Ganache: Cover the bowl with plastic wrap pressed directly onto the surface of the ganache to prevent skin formation. Let it sit at room temperature for 1 hour, then refrigerate for at least 6 hours or overnight. The ganache will become firm enough to handle but remain soft.
  5. Prepare for Rolling: Line two large baking sheets with parchment paper or silicone baking mats. Pour powdered sugar or sprinkles into a separate bowl for coating the truffles.
  6. Form and Coat Truffles: Use a melon baller or teaspoon to scoop out portions of ganache. Roll each portion between your hands into a smooth ball, then roll it in the powdered sugar or sprinkles until fully coated. Place each coated truffle on the prepared baking sheets.
  7. Serve or Store: Serve your lemon truffles immediately, or cover them tightly and chill in the refrigerator until ready to serve. These truffles are perfect for gifting or party treats.

Notes

  • Use high-quality white chocolate for the best texture and flavor.
  • Softened unsalted butter helps add creaminess and richness to the truffles.
  • Be gentle when stirring to ensure a smooth ganache without incorporating too much air.
  • Lemon extract can be adjusted to taste but do not exceed as it can overpower the delicate flavor.
  • Chilling the ganache overnight improves texture and makes rolling easier.
  • Store truffles in an airtight container in the refrigerator for up to one week.
  • Allow truffles to sit at room temperature for a few minutes before serving to soften slightly.
