Ingredients
Lemon Whipped Cream
- 1 cup heavy whipping cream
- 4 tablespoons powdered sugar
- 4 tablespoons lemon juice
- Zest of one lemon
Berries
- 1 pint raspberries
- 1 pint strawberries
- 1 tablespoon granulated sugar
Other
- Angel Food Cake (amount as needed for 8 servings)
Instructions
- Chill Mixing Equipment: Place a metal or glass mixing bowl and beaters in the freezer for 15-20 minutes to ensure the cream whips well.
- Make Lemon Whipped Cream: Beat the heavy whipping cream on medium-high speed until stiff peaks form. Gently stir in the lemon juice, lemon zest, and powdered sugar, then continue beating until stiff peaks form again. Taste and adjust sweetness or tartness with powdered sugar or lemon juice as desired.
- Prepare Angel Food Cake: Cut or tear the angel food cake into small bite-sized pieces suitable for layering in jars.
- Prepare Berries: Chop the strawberries into small pieces and combine with whole raspberries in a bowl. Sprinkle with granulated sugar and stir gently to coat and release some juices.
- Assemble Parfaits: Using small mason jars or serving glasses, layer the angel food cake pieces, followed by a layer of sugared berries, and then a generous layer of lemon whipped cream. Repeat layers if desired.
- Chill and Serve: Seal jars and refrigerate the parfaits until ready to serve, up to 24 hours. Serve chilled for best flavor and texture.
Notes
- For best results, chill your mixing bowl and beaters thoroughly before whipping cream.
- Adjust the lemon juice and powdered sugar in the whipped cream to your taste preference for more or less tartness.
- You can prepare the parfaits up to 24 hours in advance, but avoid longer storage to maintain freshness, especially of the cake texture.
- Use fresh, ripe berries for optimal flavor and sweetness.
- Angel food cake can be substituted with sponge cake if needed, but adjust sweetness accordingly.
