Ingredients
Filling
- 1 carton (8 ounces) mascarpone cheese
- 1 package (8 ounces) cream cheese, softened
- 1 package (3.4 ounces) instant lemon pudding mix
- 1 cup 2% milk
- 1 teaspoon lemon extract
Syrup and Assembly
- 2/3 cup lemon juice
- 3 tablespoons sugar
- 24 crisp ladyfinger cookies
- 2 teaspoons grated lemon zest
Instructions
- Prepare the lemon cream mixture: Beat the mascarpone cheese, cream cheese, instant lemon pudding mix, 2% milk, and lemon extract on medium speed for 2 to 3 minutes until well blended. Be careful not to overbeat to maintain a smooth and creamy texture.
- Dip ladyfingers and layer: In a shallow bowl, whisk together the lemon juice and sugar until the sugar dissolves completely. Quickly dip 8 ladyfinger cookies into the lemon juice mixture, allowing any excess liquid to drip off. Arrange the dipped ladyfingers in a single layer in an 8-inch square dish. Spread one-third of the mascarpone mixture evenly on top of the ladyfingers. Repeat this dipping and layering process twice more to create three layers total.
- Add lemon zest and chill: Sprinkle the grated lemon zest evenly over the top layer of the mascarpone mixture. Cover the dish with plastic wrap and refrigerate for at least 2 hours before serving to let the flavors meld and the dessert set properly.
Notes
- For best results, use crisp ladyfingers to prevent sogginess.
- Do not soak the ladyfingers too long in the lemon juice to avoid them becoming mushy.
- This dessert is best served chilled but not frozen.
- Can be prepared a day in advance and refrigerated.
- Use fresh lemon zest for the brightest citrus flavor.
