- Pinch of salt
For the Salad

- 1 cup mixed fresh herbs (basil, dill, thyme)
- 1 cup grated parmesan cheese
- 3 tablespoons toasted sesame seeds
- 1 - 2 avocados, cubed or sliced
For the Vinaigrette

- 3 tablespoons toasted sesame oil
- 3 tablespoons lemon juice
- 3 tablespoons champagne vinegar
- 2 teaspoons Dijon mustard
- 2 teaspoons honey
- 1 teaspoon garlic powder
- Salt and pepper, to taste
- Chili flakes, to taste
Instructions
- Prepare the Croutons: Preheat your oven to 425° F. In a bowl, toss torn ciabatta bread pieces with grated garlic, a pinch of salt, and 2 tablespoons of extra virgin olive oil until evenly coated. Spread the bread pieces on a baking sheet and bake for 10-12 minutes, or until the croutons are golden and toasted. Set aside to cool.
- Combine Salad Ingredients: In a large salad bowl, add the mixed salad greens, fresh herbs (basil, dill, thyme), grated parmesan cheese, toasted sesame seeds, and the cooled croutons. Toss gently to combine all ingredients well.
- Make the Vinaigrette: In a jar with a tight-fitting lid, combine 1/3 cup extra virgin olive oil, 3 tablespoons toasted sesame oil, 3 tablespoons lemon juice, 3 tablespoons champagne vinegar, 2 teaspoons Dijon mustard, 2 teaspoons honey, 1 teaspoon garlic powder, salt, pepper, and chili flakes. Shake vigorously to emulsify the dressing. Taste and adjust seasonings if necessary.
- Dress and Finish the Salad: Pour the vinaigrette over the salad and toss thoroughly to coat all ingredients. Top the salad with sliced or cubed avocado. Serve immediately and enjoy the vibrant flavors.
Notes
- Use day-old ciabatta bread for crunchier croutons.
- Adjust the amount of chili flakes to control the spiciness of the dressing.
- Fresh herbs can be varied based on availability and taste preference.
- For a vegan version, omit parmesan cheese or use a vegan parmesan alternative.
- The salad is best served fresh to maintain the crispness of the greens and croutons.
