Ingredients
Vegetables
- 4 potatoes, peeled and chopped
- 2 carrots, peeled and chopped
- 2 celery sticks, chopped
- 1 large onion, peeled and chopped
- 2 cloves of garlic, peeled and chopped
Meat and Liquids
- 2 cups leftover roast beef, cubed (approx. 300 g)
- 2 cups beef broth/stock (500 ml)
- 1/2 cup leftover gravy (optional, 125 ml)
Condiments and Seasonings
- 2 tbsp vegetable oil
- 1 tsp salt
- 1/4 tsp ground black pepper
- 1 tbsp tomato puree
- 1 tbsp fresh parsley and dill, chopped
Instructions
- Prepare the vegetables: Peel and chop the onion, garlic, potatoes, and carrots into bite-sized pieces, and chop the celery sticks finely to ensure even cooking and a flavorful stew base.
- Sauté the onions: Heat the vegetable oil in a large pan over medium heat, add the chopped onion with a pinch of salt, and fry until golden and fragrant, which will enhance the stew’s flavor.
- Add vegetables: Add the chopped potatoes, carrots, garlic, and celery to the pan, stirring well to combine all the ingredients and start softening the vegetables.
- Incorporate the beef: Add the cubed leftover roast beef into the pan, mixing it thoroughly with the vegetables to evenly distribute the meat throughout the stew.
- Simmer with liquids: Pour in the beef broth and leftover gravy (if using), then cover the pan with a lid and cook over low to medium heat until the vegetables are tender and the flavors meld, about 15-20 minutes.
- Finish and season: Stir in the tomato puree and chopped fresh parsley and dill, then season the stew with salt and ground black pepper to taste. Let it cook for another 2-3 minutes before serving to allow the herbs and tomato to infuse the stew.
Notes
- Using leftover gravy is optional but adds extra depth of flavor to the stew.
- Adjust the consistency by adding more beef broth if a thinner stew is preferred.
- Fresh herbs like parsley and dill brighten the dish and can be substituted or omitted based on availability.
- For a gluten-free option, ensure the leftover gravy and broth do not contain gluten-containing thickeners.
- This stew can be reheated and tastes even better the next day as flavors develop further.
